So can you paint grass on a cube? Say I want a bunch of platforms in my game, and some are covered in grass and others are covered in ice.... How would I create a box, with grass just on the top, that I can spawn into the game?

You’d probably want to use a material for that, unfortunately the foliage tool wasn’t designed to change much, if any, at runtime.
