Ujam Drums and Striiiings Tutorial

I have both vst and this is one of the best explanations I've seen: clear, precise, effective and even fun. Congratulations great video. The only perplexity about striiiiing and drums is the fact that, despite the incredible possibility of customizing the sound through the effects, there is the risk of having sound patterns that are ultimately not very original and cannot be modified. Anyway two vst really well done.

My only question is how to make sure all the different variations I make while playing are saved? I don't have four hands...lol! Can I for example make one variation, then a different variation, or work the mod wheel on my keyboard while using the mouse for something else and will it be saved? Or do I need to render down multiple different variations and place them all on one track for a uniform "Fully Arranged" work of music. (purpose is for sync licensing and the briefs often get very detailed and exact to the second. Hence my question
