I’m from johnstown pa and this is very popular here. There is a big polish immigrant community there to work in the mines and mills. The Churches sell it during Xmas and Easter and the grocery stores have it also with apricot 😐 walnut and poppyseed which is my favorite and for goodness sake don’t put raisins in it. Oh angel wings too ..yum!

My Grandmother then my Mother and now I make the Poppyseed Rolls. The yeast dough is made in the evening and put in the refrigerator to slowly rise overnight. The next day the cold dough is divided into two pieces (or four if the recipe is doubled) and rolled out very thin on the cold counter. The Poppyseed mixture is carefully spread out on the dough and then it is rolled not too thin but pretty thin. Egg wash is applied, and it is baked. I have gifted these Poppyseed Rolls to various Grandmothers whose Mothers were from the Old Country and they always applaud my efforts questioning, "How someone so young could bake like a BaBa?" Thank you.

My Grandmother was Slovak. She made the Poppy and another with walnut. Poppy was always my favorite! I asked her, "so how do you get the Poppy soft? It is not gritty..." Her Reply was, "I soak the seeds overnight, in milk." Thus, no immersion blender, nor meat grinder required! Old ways are better, often! I try buying pre cooked pastry? It's always Wrong! I hate the almond flour in the poppyseed filling. And grandma used to only put raisin in the Walnut one! The Stores put raisin in the Poppy and not Walnuts. The walnut roll is dried horribly, in one day! PS your baking sheet is too short! Lol Thank you for showing the Steps!"
