Hi Zach! First off, I want to thank you and your family for giving me the desire to find my way to God. I binge watched your show while I was pregnant with my 3rd son, and now follow a handful of ya'll on youtube, and never miss a service on the church youtube channel. Thank you all for being such a wholesome inspiration. My question is, when youre in between searing the meat and sauteeing the vegetables, where does the extra fat that was rendering go? Do I set it with the meat and place it back in the dutch oven to be tossed at the end, or do I discard it after the meat is done searing?

That is so sweet to hear! We're so glad that we could be a small part of your journey. The fat from rendering the meat should be left in the pan to add to the flavor of the sauce! After removing the ribs, you can scoop any excess fat off the top or even use a fat separator!

That looks so delicious, I can't wait to make this. I've never had beef short ribs, nor have I ever made them. This video has completely changed my mind, I had no idea they could be so easy and worth making them. Since I am 72 and widowed, I would love being able to go buy them already made, perhaps in a frozen pkg. I know one has to have $ to do something like that, but it might be something to eventually make money on. A girl can dream, can't she? Lol, I guess I'm gonna have to make them myself. My daughter is coming for a week in December, I think we can make and enjoy these together. It's a win-win her and myself. That’s one of the great things about these! They freeze great! Freeze in serving size portions, submerged in the braising liquid. They should maintain their quality for 6-12 months!

Short ribs are our favorite meal in the winter. I don't serve with mashed potatoes. I make cheesey Polenta .the combo is a taste that just is comforting.I take the silverskin off but I cook with the bone still on. That collogen just adds to the flavor..

Yes! Cooking with the bone is the best, although my kids prefer no bone! Serving with polenta makes a great combo, I’ve also had it with risotto and it was really good!

The great thing is it stores several days in the refrigerator and honestly gets even better! I can spend about 25-30 minutes on a Saturday morning and then it’s ready that afternoon to be eaten, or stored for another night that week!

After I commented on the onion tears, and keeping onions in the fridge, I cut up a refrigerated onion, and it must have been a hot one, because it STILL made me cry! Not as bad as before, but still. Worcestershire sauce is pronounced (I believe) WOOSTER-SHIRE, a lot simpler pronunciation. But it's a lot funnier hearing you pronounce it.

The fat on it is some of the tastiest parts. Why are you cutting the thin layers of it off unless it's a huge amount of it the fat is tender and good.
