This was so amazing to watch! I have to admit I was partial to Ben's ramen because of the pork broth, and how meticulous he was in draining off the first stock to produce a clearer/better stock. But by the end of it was clear to me that both the ramens would end up being fantastic. As a huge pork fan, I can easily see myself ordering James' chicken ramen if I am not very hungry, or if I wanted something fresh and light and not so intense as an eight hour broth. By the way, super kicked to see that Ben's method of making the stock is very, very close to the method we ended up going with for our pork soup recipe.

I was just shown this channel by a friend this last weekend, and I've been trying to binge since then. I've only recently been serious about cooking. This has ruined my experiences with instant meals, but "real" food has been so much better. I have a hard time following recipes, since my family is known to throw things together. But I think that's what makes these videos a lot of fun to watch. I love watching the chefs work, and I can't predict what they'll make or how they'll turn out. But you also have a good balance with the "normals," because everyone involved is a foodie, and no matter what the challenge is you're all judging each other. I've also been enjoying the gadget and pretentious ingredient reviews, too. Really, there's no video I've seen thus far that hasn't been bloody brilliant, and I love it.

FYI, Tamari does not necessarily mean "Japanese soy sauce". Tamari is simply soy sauce made from fermented soy beans and little to no wheat, while "soy sauce" is made from both wheat and soy. So, for all of you celiac disease sufferers out there, Tamari is what you want. Just make sure that you look on the ingredients list to make it's a brand made without wheat. Though tamari made with wheat always uses much less wheat than soy sauce, it's still enough to mess up your stomach. Taste wise, tamari tends to be darker and a little more mellow, as well as being less salty than regular soy sauce. It makes an excellent dipping sauce. And as LeeboyPancakes mentioned in a different comment, that chashu (braised pork belly) is about twice as thick as it needs to be. And for real Japanese-style chicken nuggets (karaage) you'd use DARK meat, Ben, not white meat.
