Tomato Rice Recipe
Tomato Rice is a flavourful and aromatic dish that combines cooked rice with a rich tomato-based sauce.
*Ingredients:*
- 750 g Basmati rice
- 6 large tomatoes
- 2 tbsp tomato paste
- 3 tbsp vegetable oil
- 100 g butter
- 3 chicken breasts, cut into strips
- 1 tsp salt
- 1 tsp sweet paprika
- 1 tsp dried oregano
*Tomato Sauce:*
1. You can easily peel tomatoes by immersing them in boiling water. Bring a pot of water to a boil. Cut the top off and notch the bottoms of the tomatoes crosswise. Then plunge the tomatoes into the boiling water briefly to make the skin curl away.
2. Remove the skin from the tomatoes. Cut them roughly and puree them with a hand blender.
3. Measure the tomato puree with regular cups. If it is less than 10 cups, add chicken stock or water to make up the difference.
*Make the Rice:*
1. On medium-high heat, add 2 tbsp of vegetable oil and 50 g of butter. Once the butter is melted, add the onion and sauté for 5 minutes. Add 2 tbsp of tomato paste and cook for 1 more minute.
2. Add a cinnamon stick and the rice, and mix well for a couple of minutes.
3. Add the tomato puree and mix well. Bring the dish to a boil. Cover and let it simmer until all the water is evaporated.
4. Reduce the heat to low and let the rice cook for 40 minutes.
*Make the Chicken:*
1. Add salt, paprika, and oregano with 2 tbsp of vegetable oil to the chicken. Mix well so all the chicken is covered by oil and spices.
2. In a pan, add a little butter and fry both sides of the chicken strips. Make sure the chicken is cooked perfectly.
Transfer the rice to a plate and add pieces of chicken. Garnish with micro-greens and sliced green onions.
*Serves 4-6.*
