The gravy won’t taste like flour if you spend more time cooking the fat and flour until it gets some color. This avoids the raw flour taste.

I use your recipe to make bacon gravy! I don't match the stock to the drippings though (because I didn't have pork stock when I first made it). I used chicken broth with bacon drippings. The broth acts more as added notes of flavor, as the bacon flavor is REALLY strong

This is a great basic recipe. Actually the best I've found after a long search. I was going to say the same thing as Simone Goyeneche has said, that if its cooked long enough there would not be that taste. Truly gravy shouldn't be made quick. Anyway, that's what I've discovered. I use both flour AND corn starch to get the texture I want. The gravy has to be cooked long enough for there to be zero evidence of flour or cornstarch. I didn't know about this easy chocolate gravy idea and can think of a lot of things to do with this. Yep, this is basic and for that it is perfect! Nice to see somebody put down pomp and grandeur and just tell us what it needs to begin with. From this people who enjoy cooking can move forward. Thank you so much. Also, I think next time I'll do what Apollo has suggested and toast the flour beforehand too.

For corn starch version it is good to dissolve it in a little cool water before pouring it in. No lumps to work out that way.

1. People only taste the flour because the roux (the butter and flour mixture) isn't cooked long enough. It should be cooked for a minimum of two minutes before you add the broth to cook the raw flour taste out, but you added it once the roux was combined. 2. The roux itself shouldn't typically be that lumpy. If you leave it alone for a few seconds, it should slowly spread out and bubble. Make sure the measurement are 1 for 1, and keep stirring so it doesn't burn. 3. Don't add the broth all at once. Add a little bit at a time and mix it thoroughly with the roux. This will prevent lumps. 4. To add some extra flavor, begin by sauteing some slivered onions for about five minutes. Add the butter and flour to the sauteing onions and stir continuously for at least 10 minutes. Add a little extra seasoning to the saute/roux mix before adding broth and let it cook in. This step isn't necessary, but it adds flavor. You can also add in sliced celery, bell peppers etc to the saute depending on what the roux is being used for. Not trying to be overly critical, just want to share some tips I've learned from my cooking.

I always fill the bottom of the pan with water and stock... that mixed with all the drippings together there will be more than enough liquid for gravy. You also get a really moist turkey with all that liquid at the bottom.

After lightly brown the flour with butter, I poured chicken stock in but the cooked flour just clump together and did dissolve completely and nicely like hers.

Cooking the flour longer will make a richer flavour that adds body to the dish, it's good, but make sure not to use on a light sauce, but a stronger one like beef stew.

Hello Rachel thank you for your video. I really never knew how to make gravy properly and always used bought gravy granules and to think all those lovely meat juices where thrown away. Just to ask you if you could advise. I've bought an cast iron pan only because my pans are not for the oven. Have not tried it yet but reading the instructions it seems hard work and a bit of a carry on! I would be grateful for advice. Many thanks in advance. Sorry but it looks like Ive written a book!!! The English way of making gravy is to add the stock to the roasting pan, bring to the boil on top of the stove, stir to dissolve all of the stuck sediment, (it then goes into the gravy, and not the washing up water) and thicken with flour or corn starch that has been mixed with a little water. This avoids flour lumps forming. Add the flour water mix a little at a time, so that you reach your desired thickness of gravy. My favourite thickness is when the gravy eaves a layer on the back of the mixing spoon. Your gravy is now ready to serve. This method of gravy making ensures that washing up is much easier, as all the stuck-on goo from the bottom of the pan has been transferred to the food. Why make delicious wash up water and then drain it away?????

It would be much better if you let the flour cook in the pan before starting to slowly add the liquid in small batches, whisking it in between. You then won’t need to strain and it will be lovely and thick and you won’t taste the flour at all.

You can mix your fats/proteins and it will taste just fine. Absolutely no reason you can’t use pork fat for canned turkey stock. I fry a few pieces of bacon in a separate pan, add that with its pan drippings and scrap to the turkey stock, let simmer a while, then strain. I do this because I want to do my gravy before the turkey hits the sauna, so I’m not getting any drippings from THAT. I’ve also tried frying up the neck and giblets to create some fatty “drippings,” but you don’t get enough and it’s not a strong enough flavor. Bacon rules, and if you’re nervous, use turkey bacon.

I saw a bottle of gravy at the store it and it was still liquid like. When I make gravy from scratch using flour, it becomes gel like when it cools down. If I use corn starch instead of flour, will the gravy stay liquid like when it cools?

Store-bought gravy probably has a lot of crazy ingredients in it to make it to that. You can always use less corn starch or flour, though to make the gravy thinner.
