I feel like cutting it with the grain at the end was a mistake? Probably doesn't matter though since it's wagyu.

You must remember that the Final Cut of meat needs to be against the gratin so when I sliced with the grain, when you cut it and eat it, it’s against the grain for juiciness 🙏🏻🙏🏻 I’ve never had meat with so much juice coming out, I promise you!!!
