I love Mediterranean cuisines (of all varieties) and adore the celebration of simple ingredients (such as seasonal veg) so I am sure I would enjoy these a lot!

You've gotten me into cauliflower which is cheap, stays good in the refrig for quite awhile, and scales easily into servings for one or two. I'm not a big garbonzo fan so I'll try it with white beans (maybe butter beans?) to keep the same look and feel. I googled caper substitutes and found that some use chopped kalmata olives

Cauliflower is definitely a "pantry" staple in our house. You're totally right. Sometimes I'll forget about it, and then a week later I'll decide to pull it out and see if it's still good... and it usually is! They also yield so much "meat", which makes them even more economical. Really, any type of bean (except maybe black?) would be amazing in this dish. It's all about using what you have. And as good as it is on day one, it is even better the second day. Don't skimp on the Garlic Caper Oil, and give it a good squeeze of lemon juice or a drizzle of red wine or balsamic vinegar at the last minute.

Looked so good I made it for lunch today. I don’t have an air fryer so I cut the cauliflower and brushed it with a little water nooch and some oregano baked it for 30 minutes and then basted again with left over seasoning which I added a teaspoon of pesto and tossed it with the cauliflower and the chickpeas let it bake for another 10 minutes. I was trying to keep the oil to a minimum. It was delicious, everyone enjoyed it and I even had a loaf of sourdough bread in the freezer. Actually I had all the ingredients on hand , thanks for your wonderful idea. I will make this often.

7:10 I have never added miso to pesto but maybe it is time I gave it a go! I rarely make pesto but I feel like it might really improve the flavour since it is a fermented product, similarly to parmesan.

The miso does so much. It adds saltiness and umami. You don't notice it as "miso" at all, but it brings so much to the party.

I'm really trying to make things with pantry staples that you can find at most supermarkets. Kroger (mine here is a Smith's) has a great Asian foods section, and the more we demand things like miso from them, the more we get.

I made the garlic caper oil. It is so delicious. I didn't have a lot of time so I put it over steamed cauliflower. It was a hit. I see in the recipe it doesn't have any nutritional yeast but I thought you said to add that in the video so I did. I am sure it's delicious either way. I can't wait to try it with the grilled tomatoes or the other vegetables.

Yay! So glad you enjoyed it. Yeah, the GCO didn't have nutritional yeast in it, but I bet it's an amazing addition. I've working on another "sauce" that's miso, olive oil, and nutritional yeast. Shhhh... It's for making buttery noodles. So good!

Honestly, yes. The best part of a spread like this is that you've got it in your fridge to pick at through the day. Like I mentioned in the video, Ben and I went in on the original leftovers, and that's what made me decided to share these recipes. The same exact thing happened the day after shooting. We found ourselves standing at the same counter, bread in hand.

confused about the pesto. isn't pesto's main component basil? is it really like pesto if there is no basil?

I'm not an Italian food or language expert, but I think just like the word Bruschetta, which references the grilling of the bread and not the toppings, pesto refers to the process of making a "paste" out the ingredients, and not so much the ingredients themselves. Italian cuisine is very regional, so depending on where you are, the ingredients will be different. Not all regions are rich with basil, so not all regional pestos will contain it. My pesto is very much in the spirit of Italian cuisine in that it encourages you to use what you've got to make it.
