Definitely a special occasion food. Although, if you have some free time, make a batch and store them uncooked in the freezer. When you want to enjoy a couple, just pop them out and you're good to go!

Thank you so much! We appreciate it, and we send love right back atcha. The cool thing about this recipe and the basic ratio is that you can pretty much make it whatever flavor profile you like. I think I'm gong to make a mushroom version today. The amounts in this particular recipe are a bit "tight" so that you can turn the risotto into arancini, so if you find that your risotto is a bit on the thick side coming out of the IP, then add a bit more broth or stock before serving. Can't wait to hear how it turns out!

This looks great! Do you think chickpea flour could be used in place of the all-purpose flour or would you recommend something different re: gluten-free flours?

Thanks! I think the chickpea flour might work, honestly. It's mostly just to help you get them formed into balls, and to help the chickpea flour "egg" stick. It's worth a shot. You'll know after the first one if it's a good idea. Otherwise, yeah, just any GF flour should work.

Looks delicious! I have a concern though. I thought miso was not supposed to be subjected to high temperatures (something about destroying live cultures). Wouldn’t it be better to just add it at the end along with the fresh corn? Thanks for the recipe. I love fresh corn!

Thanks. I was more interested in the flavor benefits and not so much about probiotic nature of miso. Although, I assumed that since it's used in soups quite a bit that it's wasn't totally bad to heat it up. Good questions, though.

@@MonsonMadeThis Mr Google says that boiling destroys the miso enzymes. So likely even if added late in the risotto cooking process if frying or baking for anancini the enzymes would be killed then too. It also states that some miso is sold pasteurized and therefore does not even contain enzymes. So we gotta read labels.
