This place is a biohazard trap... Using that wok ladle to go from raw egg, to soy sauce then sauces is a cross contamination nightmare.. But, I want a plate...Ill take my chances.

I built a natural gas outdoor wok cooker able to produce the heat to make quality food like this. The main difference is the cook. I can make a very good dish however I think it would take me several lifetimes to achieve the level of quality and perfection this MasterChef is able to produce. This video is a joy to watch! thank you for sharing!!!

Several life times? 2 to 3 week if you cook every day. The cooking is not the most difficult, cutting of the vege and meat kills

No, he's actually being pretty sloppy. The sauce that goes with the fried noodles is incredibly loose and watery. He often makes very sloppy fried rice and noodles. This is a cheap place because the chef doesn't know what he's doing

wok cooking should be done in almost a minute. like single portions. if you see people making it more technical than it needs to be. they're just advertising their shit for their business.

I just bought a high output wok burner and it came with an 18" Cantonese wok. Which is friggin huge! I'm used to a one handle wok. So I was searching for videos on how to handle a cantonese wok without ending up doing the stuntman on fire Frankenstein walk. Well, THIS IS HOW YOU HANDLE A CANTONESE WOK!!!

@@matthewching500 im getting into this right now. my family owned chinese restaurant for like 29 years now. our woks are much bigger than his. so can't really do the wok flip( whatever its called lol). man everything hes using to cook with, like the tools plastic containers, so chinese, love it. the damn health inspector recently came to our spot and told us we cant be reusing tin cans from opened bamboo shoots. kind of annoying cause we were using it for so many years and other inspectors didnt care. but you get this one asshole that want us to change it and get stainless steel. they just want us to spend money and pay more taxes. and now canada wants to ban single use plastic. its so laughable, banning plastic garbages just to create more garbages.

星州大路煮炒,就是煑出來是:水水的,包括乾炒牛河。是當地流行文化。 港粤廚師做乾炒牛河,要花氣力拿起鑊河粉拋混,因而很多廚師的手,因長期用力而有职業勞損.

His wife/partner is taking orders, prepping base ingredients (rice noodles etc), doing the final garnish and adding condiments, utensils, packing takeaways, collecting cash. All without a single docket or shouting at each other, Perfect teamwork.

Watching people work tirelessly like this day in and day out makes question whether or not I'm helping when I order from their restaurants. Like, I get that me being a customer pays for them but I feel bad that me being a customer is the reason they work so hard.

Yeah you just need a 100,000 BTU wok burner lol. Then your food definitely won't stick (unless you crowd the pan).
