yeast = the smell...yeast also doesn't like dry or cold...it stops growing. ( I was a pro baker/ cake decorator for 28 yrs...in the US) this baker is too dramatic...blast chiller/convection oven and stretching the dough like that....hahahahahaha...yeah.
