I genuinely felt offended watching this, even more than when watching Jamie Olive Oil. It was that attitude of "Asian cooking is so easy, you can just throw whatever crap you want in it and voila, you made an Asian dish." It would be like if I said, "Fish and chips are so easy to make, but you don't have to use fish, you can even use beef. And you don't have to fry your potatoes, you can just steam them." or "Scones are super easy, you don't even need to use flour, just use whatever crap you have around the house, even tofu will work."

They're treating Pho like it's fried rice (where you do have a lot more degrees if freedom), but even with fried rice, there are rules. I can't put rice in the oven, nor can I add buffalo wing sauce or ketchup or I don't know, fucking Dijon mustard. There's a certain WAY to make these things, certain things you can use, not use, and so on. This "anything goes" mentality is really really dumb. I don't doubt that Pho is different depending on who's mama is making it, but they just just say "It's a free for all!!!! Use whatever you'd like!!!!"

As a representative of people from Irish heritage, I've seen this woman cook Irish food also, don't worry, she makes my ancestors cry also , she did horrible things to Irish stew, Colcannon and other Irish foods so I'm not greatly surprised that she fucked up Pho so badly (one of my favourite Asian foods along with Nasi Lemak and Nasi goreng).

The problem is "chefs" like this lady are trying to take old world recipes that take hours to make and try to change them into something you can make in 15 minutes...it really insults the dish. If she wanted to make beef noodle soup, then she would be fine...but Pho...my recipe I use, I start my broth the night before, I don't dump a knoor cube into a sauce pan and call it a day...I would look up her irish stew but I am not sure I can handle watching it

He's also super lenient on his pho recipes too. An hour to cook pho? No, 12-24 hours but he gave the "uncle" status to that punk kid that cooked pho in 8 hours. I've been trying to perfect pho for awhile now, and if you google a recipe you will see it takes 12 hours at least unless you use a pressure cooker (which is also offensive to some people). So you know these British people are REALLY fucking it up.

It's honestly annoying sometimes, I'm part Chinese and so some of my friends will jokingly tell me "I had the food of your people last night" as a joke and I'll ask "Oh yeah, what did you have?"... Their response "I had ramen and Katsu curry" so when I try to correct them they laugh and say "Oh it's all the same thing".

I wanted to make pho after watching this show, so I started cooking. I realized I didn’t have normal beef so I used ground beef, and I didn’t have a wok so I just used a frying pan, and I didn’t have broth so I just used ketchup, and I didn’t have noodles so I just used some buns. It was delicious! I love this traditional dish.

I usually think uncle roger is being harsh for comedic effect but this time it's actually incredible that this lady was allowed on national television. The beef is completely undercooked, blue rare, the broth is likely from a box, the noodles are overcooked, none of the elements of pho are honored here whatsoever. A total disgrace.

As Uncle Roger claimed that the beef in Phở must be raw and cooked with pouring broth, that is not quite true. There are at least 4 ways to cook beef for Phở in Vietnam. 1) Tái (Rare): Raw, thinly sliced, or even hashed. Cooked by pouring broth or sometimes, quickly boiled within the broth in the pot for a few seconds. 2) Chín (Welldone): Cooked as a whole big piece of beef inside the broth from the beginning to bring flavor to it. When to be served in a bowl, it will be sliced thinly as well. Its variants include Nạm, and Gầu, depending on the amount of fat in the beef. 3) Tái lăn (Stir-fried): Thin slice of beef, stir-fried, maybe with onion, put on top in a bowl of Phở. 4) Sốt vang (Bordelaise soup): Originated from France but kinda modified when Vietnamese make it. It is a pretty complicated soup made from beef, wine, curry, potatoes, and carrots. They use both the soup and the beef of it with Phở. With or without regular broth. Despite all those types, there is no shitty version of it using beefsteak.

I'm not even Asian and I feel insulted by all the self-proclaimed "chefs" taking Asian food names and then making some random shit that has very little to do with what the actual dish is supposed to be. They could at least be decent and say "today we're going to be making a dish inspired by Pho" instead of claiming they're actually making Pho. I would lose my shit if some idiot "chef" on some TV show told they're making Karelian pasties today, and then continue by replacing rye with wheat or "you can use any other grain you like" and replacing the rice porridge filling with some goop made of beans. I don't believe in cultural appropriation, I think it's great if you love some thing from another culture and want to embrace it and do that or wear that or whatever if you do it in a respectful manner. Like sauna for example. That's a Finnish thing, you don't see Finns crying over people from other countries going to sauna. You might see Finns complaining about saunas when people use them wrong or in a disrespectful way. If someone wants to wear a traditional Finnish suit or headgear or whatever, I think that's great. You're raising awareness of our culture and that's all fine and dandy. You're not stealing our culture, you're embracing it. But taking some specific traditional food from some other culture and completely defacing it and saying you can use whatever ingredients you like and then preparing it completely wrong is just insulting. Foods have recipes. You're supposed to use specific ingredients and cook them in a specific way to make that food. If you make it from different ingredients or prepare it in a different way, then it is not that food and you shouldn't call it that. If I had a cooking show and said "today we're making traditional Italian pizza" and then took a tortilla and slapped some tofu and vegetarian "cheese" on it and threw it in an oven for two minutes while talking about how I love Italian cooking and how good this pizza is, people would go mental and call me a complete hack. But now as the general public aren't that aware of what Pho is supposed to be like, they don't know how badly that TV "chef" messed it up and actually think that's how you make Pho.

I don't mind it so much if foreigners say they were inspired by a traditional dish or substitute one or two ingredients so they can personalize it and be creative. But they lose all that when they claim "this is the traditional way" when they're so off the mark. Don't get me wrong, I hate the other side of it where we gatekeep our culture so much that people say "You can't do that because you're not us," but if they take the time to learn, appreciate and respect the culture behind it then there should be no problem.

I remember once going to a camp where we were promised a meal with falafel in it by a chef that was allegedly skilled with vegan food. My group had specifically asked for that dietary restriction. We weren't expecting anything as good as in our home country of Egypt, given that western falafel typically has more levantine influence. What we got, however, was so bad we couldn't even begin calling it as anything but chickpea mash in English. It didn't even have the crunchy brown coat from deep frying to hide its yellow disappointment, and was, if I remember correctly, served something like steak. It turned out this was the first time the chef ever cooked vegan, as he said himself. Falafel is meant to be a sandwich body, deep fried and, preferably, served with tahini in flat bread and, even better, a salad wrap. The 'falafel' stuff we were served couldn't even pass for failed middle-eastern cuisine, becoming an article of ridicule ever since. One quick look for falafel, even on KZbin or google images, could've saved so much agony. All I ask is for people to actually look up what they are name-calling is supposed to be, so we at least get the essence right the first time in an edible package. I don't even care especially deeply about exact ingredients so long as natives can understand certain replacements (ex: Egyptians use a bean base in falafel, or "ta'meya" as we call it, rather the more common base of chickpeas. In fact, I was surprised to know how long my mom made her falafel with chickpeas here, even knowing that they were easier to find.)

It’s heartbreaking when seeing a chef without any respect for my culture. She literally puts anything she wants into it and thinks that doesn't matter. And the fish sauce, I know it is smelly but it’s something we eat almost everyday, don’t use the word “terrible”!

The best thing about uncle Roger apart from his humor is, that with him Asian cuisine isn't just Chinese but all of Asia. His knowledge about Asian food be it Indian, Chinese, Thai, Vietnamese, etc. is mind blowing.

Nigel is Malaysian but has mentioned in interviews that he actually does a lot of food research and contacts chefs from those countries before reviewing any dishes, so he has a lot of knowledge on all these different Asian cuisines 😊 It’s ironic a comedian does more recipes research than chefs who cook the dishes 🤦♀️

I'm a former Chef and this just makes me cringe, it's insane and outrageous people like that exist on TV. I learnt to make Phô the right way years ago, my Vietnamese friend's Mom would've had a stroke seeing this woman butchering such a beautiful, perfect dish.

Other Uncle Roger's reviews, I could get over the disrepresented cooking, but this one just hit where it hurts. Too many times when I was young bring my food to school, the kids would say the same ignorant thing this woman said, "fish sauce smelled horrible" "shrimp paste is disgusting". I stopped bring food to school ever since. It took years for me to appreciate my food publicly again. Fish sauce and shrimp paste are very essential to Thai dishes and when I got those comment, it's almost like I was personally attacked. I appreciate my food more now since every western food is pale in comparison with Thai food. Whoever run those British cookshows, at least have cultures consultant or something. You already fucked up the whole world, at least do one thing right.

I would actually come over curious to find out what it is then judge you for it! genuine question though, where can you buy the traditional shrimp paste and fish sause stuff I buy is just gross and I get told isn't "correct"

The “chef” said it herself. She wasn’t making Pho - she was making Faux. In Faux, you can throw any random thing into the broth and it will live up to its name. (I’m still curious about the mystery black liquid she added. Balsamic vinegar, perhaps?)

I used to work for a company that made a pho bowl for the grocery stores. When I was in the taste testing group, I told them the broth was way too dark, ramen noodles was incorrect and there aren’t supposed to be mushrooms in it. The chef was annoyed with me. That product was discontinued in 2 months. I wonder why….
