The golden fried rice technique is actually one trick I learned for when you have to use fresh rice. I dunno if that's why Esther used it, but the fat coating prevents the grains from sticking together, especially important for Japanese and Korean varieties of rice. The method I use is one (whole) egg in the rice, the rest scrambled like normal.

I REdiscovered MSG after years of believing the rumors about its health risks and learning that there really isn't any health risk when used in moderation (just like regular salt), and I've officially fallen in love with this secret ingredient, it really kicks things up a notch and my fried rice tastes sooo much more like take-out with the MSG! I'm so pleased. I love wok cooking and how simple, quick and flavorful a lot of Asian wok dishes are. Thanks for the cooking tips!

I like Esther, many good tips, and authentic way to do fried rice. At my hometown we also mix the liquid whole egg with the rice, so that they blended perfectly.
