I get a meal prep service delivered during the week because I am sooo lazy when I work and am going to school. I always order a lot of the Asian inspired dishes, and when heating up some spicy Korean pork with kimchi and white rice, I looked at the packaging and realized the chef who created the meal is Auntie Esther. Actually putting soy sauce in the water is not a bad idea. The noodle will be well seasoned (just like putting salt in water when boiling pasta), and noodles will be coated slightly with brownish colour from soy sauce (especially if you can’t find the right type sweet potato glass noodles)

@@ciaochau2873 Glass noodles absorb flavor better than pasta, so you should just add flavor after boiling, no point in flavoring the water only to dump most of it away. Also, unlike salt, soy sauce is a combination of many flavors, so some flavors will stick to the noodles more, while some others will stay in the water more.

The joke is that Americans often have unhealthy diets characterized by use of fatty foods. Here, Bobby is making Fried Chicken and Mayonaise. These foods are the perfect example of being terrible for one’s health due to the cholesterol and fatty oils. Additionally, the US is the only OECD country without universal healthcare. See King v. Burwell; see also NFIB v. Sibelius. Thus, Uncle Roger’s joke is social commentary on America’s fatty foods and health politics. Also, I am American.

The 'finding pickle' moment is from an American tradition that either comes from Germany or has US-based German influence from the mid- to late-1800s (depending on which version of the story you believe). Somebody hides a glass pickle ornament on the Christmas tree on Christmas Eve and the person who finds it gets some kind of prize of either special recognition, a treat, etc. So this was their play on that tradition.

Yea, back in the day when he first started doing this "challenge chefs at what they excel in" thing, he'd win almost all of the time in a straight fight. He knows what works and what people like, which might not always be authentic--- as authentic usually means regional tastes that might not have wide appeal. I guess his showrunners (or Flay himself) noticed that and started doing handicaps, but at some point it became the norm and now they have no idea how to tone it down without it looking like Flay can't handle it.

As a Korean im very impressed that Uncle Roger knows a lot of Korean cultures and cooking style and putting fish sauce into bulgogi is a bit too much. we don't use fish sauce that much as the western people thinks and we don't "wok hey" things and we don't use "wok" and fire shows. Japchae goes with beef. if you make Kimchi stew going with pork is the answer and knows why. Gochujang with mayo is a curse thing....etc.....Uncle Roger you impressed me LOL oh yeah and about the bacon thing well of course it's not tradition but fun facts Koreans actually like bacon as well but we go for pork belly rather then bacon 12:50 and he knows that gimchi stew needs too look more red. that looks like doenjang jjigae

I've seen Bobby combine 고추장 with mayo a couple times before in other dishes. He seems to really enjoy that combo. Me, not so sure though…

Giving Bobby credit for not knowing what the Cheusok holiday is (I don't either 😅) and not having asian cuisine as his focus, he did pretty great. I gained some respect for Bobby Flay with this! But nobody deserves Uncle Roger's love more than Auntie Esther...I'm sure she knows what she's doing! 😍

There's so many stories of people meeting him in his old Good Eats days and him being a chill, fun but witty sarcastic guy. I think the industry and age made him into a grumpy man, unfortunately.

Sounds like me. I never bothered to learn actual traditional dishes, but through experimentations and watching cooks mix certain ingredients together, i am almost always able to make a really tasty dish with pretty much nothing. (Sometimes it goes bad cause i am trying out something that i think won't work, but i have to try it just in case).

Yes it's difficult to even buy avocados in Korea lol from what I hear. But you can't put avocado in Kim bap else it's just going to be a California roll

Actually, Kimbap is not treated as a 'traditional food' in Korea, so lots of Western ingredients, including cheese, are being added in nowadays. But it is hard to buy fresh avocados in Korea, and I've never seen avocado in Kimbap.

One of the cool things about Flay is his shows for like the last 15 years have been geared to showcasing non-celebrity chefs. Yeah, it's always kinda about Flay, but he also is an expert at competition cooking (look at how he flogs that crispy rice time after time, because it's a hit with the judges.)

Bobby Flay is a pretty good tv chef. Honestly to cook all those dishes by himself in a competition is deserving of credit. I'm going to assume though that because its a TV show he knows some info before hand or at the very least he or is team has time to research the opposing chef.

Cilantro is actually in a lot of Asian foods, it just goes by a different name. It's either coriander leaves or Chinese parsley. Coriander seeds are also common to Asian cooking. Cilantro is the leaves of the coriander, while coriander spice is from the seeds.

just for a bit of context for the pickle. in some places in North America we hide a small pickle ornament on the Christmas tree, and the first guest to find it gets a small gift (or just bragging rights). I live in NB, Canada and my family has one

The pickle is actually a weird german tradition called hiding the pickle we do in our house on Christmas. The person who finds the hidden pickle ornament is beleived to receive good luck in the next year (that person also gets to open gifts first on Christmas) 😂

Also seasoning is important Uncle Roger, I would think you, the king of seasoning, would know that XD. Because cast iron pane are such a high carbon steel, if you don't put a protective coating on them they rust easily. Additionally, seasoning a cast iron skillet gives it a non-stick surface!
