The chicken is actually called 叫花鸡 or beggar chicken in English and it’s wrapped normally in banana leaves, then dirt, and then tin foil. Then placed into a fire to cook and the chicken comes out like in the video, juicy, tender, and flavorful!

I think it's lotus leave, tin and then dirt. At least the one I ate when I was young was done like that! Not sure about how it was done when tin foil was not invented as it was at least 400 years ago. There is a similar dish which was invented in Zhou Dynasty and is done with piglet.

The chicken that woman was cooking was a chinese cuisine dish called "Beggar's Chicken". The origin story is that a beggar managed to cook a chicken perfectly by slathering the chicken in mud and burying it, then lighting a wood fire (in this case, a charcoal fire) over it. A local merchant smelt the cooked chicken and made a business deal with the beggar to open their own restaurant. Eventually it got popular in China and now is quite a staple dish in restaurants (they use more modern methods like this woman did, covering the chicken in lettuce and tinfoil) . I wouldn't recommend doing it in an office building unless you're as desperate as that woman...

I think she’s trying to mimic a type of traditional Chinese food called the JiaoHua Chicken (叫花鸡), it wraps lotus leaves around the chicken along with soil so the scent from the lotus leave will go in the soil while keeping the chicken moisturized under heat.

She initially worked at a media company which (from what I know of the Chinese media industry) probably cut together clips from other sources and put on headlines as news. That's why she was allowed to film this series in her office, the first ever video was uploaded to the company channel. I'm not sure if she ever left and opened her own studio or if she's still at the same company, but pretty sure where ever she is, the company's biggest source of income and popularity would be from her videos now, she's one of the most well known social media stars in China.

FUN FACT: cooking stuff like roast lamb and/or potatoes underground in foil very close to a campfire is actually a great way to cook, from personal experience, tastes great, would recommend (dont forget herbs tho)
