I tried to build something like this a few months ago using UnityEngine.UI.MaskableGraphic, but it turned into a big mess, and I gave up. Your approach using CanvasRenderer is much easier to work with. Thanks!

By that same principle, could we do skinned meshes?

The mesh itself does work, but the scaling is weird and it won't animate. Maybe that's possible is you rebuild the whole skinned mesh renderer component but thats not worth it, better to use a rendertexture in the case you need an animated mesh :)
