I'd like to use my own ship models with this pack. Is it possible to switch out the meshes with my own?

Hello, Yes, you can easily replace the mesh. To change the ship model you just have to add the sockets with the same name to the new model and they are 5 sockets : [Thruster, ThrusterL, ThrusterR, RocketL, RocketR]. Thank you.
