I think that was the maple syrup burning. Just don’t add it. Maple syrup tends to do that.

DO IT. I live in Eastern PA, and I’ve had vegan “cheesesteaks” in Philly. There is a place in Philly called Blackbird Pizzaria and they make their own seitan that they use for their steaks. You can buy just the seitan. I highly recommend it for vegan cheesesteak. blackbird-foods.com/original.html

Also, I’ve made my own roux-based “cheese” sauces that make a good substitute for cheez-whiz, HOWEVER, I’m a “provolone-wit” type person (gotta know to speak “cheesesteak-lingo” in Philly...) so I’d probably substitute the Follow Your Heart provolone slices instead. 👍🏼👍🏼

Just a pinch of ground fennel makes it extra breakfasty. For an egg reference size, back in '84, when I worked at McDonald's, they used medium eggs. For ethical reference, the hens had to have been severely malnourished, because the shells practically shattered when picked up, and often shattered as cracked. They were paper thin. The yolks were the colour of lemon pith before cooking. Anyhoo, always a fan here. You're doing much needed legwork.

Herne Webber the larger the egg the more nutrition, energy, and toll is put on the body of the chickens which is why the shells were probably more fragile. The egg industry itself is incredibly cruel (blending up aka “culling” baby male chicks alive, cutting off very sensitive and vital tip of the chicken beak, mental disturbance among chickens, high stress ect), but adding the extra level of genetic manipulation of making the eggs larger when the chickens have already been made to genetically lay much much more eggs than they would in the wild is even more cruel.

SCREAMIN' LORD BYRON some McDonald's, like the one I used to eat at, wouldn't even have a yolk running through a big egg white like that. It's really just a (nasty tasting) yellow disc.

My method was to marinate the tofu it in a mixture of dijon mustard, turmeric and black salt, since I don't have access to Just Egg in my country. I found this made it so flavorful and nice and soft and gooey!

Heads up, heating kala namak dissolves a lot of the flavour so I recommend adding it to your, "egg' after you cook it.

Great news. Just Egg Folded a frozen version of Just Egg that makes a perfect "JustEgg " McMuffin. You can put in a toaster, or microwave or in a pan. They are also releasing Just Egg Sous Vide. Suggest you visit the Just Egg website for recipes and details of their new items. Just Egg has reduced their suggested retail price which makes it even better. They have improved the quality of it as well.

Great video! I love when you deconstruct existing products! Black salt is delicious! A friend of mine turned me on to it years ago. It’s good on so many things but the sulfur certainly brings egg to mind first and foremost.

I like the creativity on the tofu egg! I've been making crumbled tofu patties that I mix a little oil, corn starch, black salt, and sage into. It really nails that egg taste and mouth feel.

I get my Just Egg to cook in a puffy souffle using the Breakfast Sandwich Maker appliance! You could you an egg ring too...slow heat will do it and it's awesome! Love your recipes! XOXO

Love these videos! Just a tip - I've noticed that the black salt loses its potency during cooking. I recommend sprinkling it on at the end of cooking for a more pronounced flavor.

I love, love, love black salt. I use it in my eggless potato salad and you'd never know there weren't any eggs. I also put it in eggless fried rice and yummy!

Love your videos-quite inspiring. Just a suggestion, I would argue that the better way to mimic sausage is to make it from TVP because you can infuse pork seasonings and then later add sausage seasonings when you work it into a patty (with methylcellulose for example).

I made a very similar sandwich this morning but with tofurkey slices as ham instead of the beyond and I made a yolk dipping sauce. I like to add my black salt after taking it off the fire. It loses its potency the long it’s cooked.

That just egg in the tofu round idea is absolutely brilliant. What I've done in the past to make a vegan version of the sausage egg and cheese McMuffin, is after cutting the tofu with a Circle cutter I'd marinate the tofu in a small bowl of water and Kala namak and let the tofu soak in there for about 10 to 15 minutes then pat dry. Typically I would use gimme lean veggie sausage and either daiya or follow your heart American cheese. The vegan English muffins I get from Franz bakery. Great video!
