Levels Chief Medical Officer, Dr. Casey Means, chatted with our advisor, Dr. David Perlmutter on the discovery of how the elevation of uric acid in the body is a causative mechanism in the development of metabolic diseases, and one of the key links between obesity, diabetes, heart disease, neurologic diseases like dementia, ADHD, fatty liver disease, and more.
Sign Up to Get Your Ultimate Guide to Glucose: levels.link/youtube?...
They also covered:
- The several mechanisms of how uric acid causes cellular dysfunction and insulin resistance, including oxidative stress, inflammation, and even preventing insulin from getting out of the blood stream effectively.
- The evolutionary reasons why the metabolic dysfunction and weight gain caused by uric acid would have benefitted us historically in terms of low access to food and water, by letting us more easily pack on weight and raise blood pressure. And how we now live in an evolutionary-environmental mismatch where this survival mechanism is now hurting us in the face of caloric abundance.
- The different dietary and environmental factors that generate uric acid, including fructose, purine rich foods and umami foods, dehydration, alcohol, and more.
- The optimal levels for uric acid.
- How uric acid impairs our hunger signals, drives us to eat, and even promotes risk taking behavior. We talked about how to reverse high uric acid levels as a way to unlock optimal health.

I am 66 and use no pharmaceutical products - prescribed or over the counter for any reason whatsoever. I used to be morbidly obese according to two medical doctors. I used to have a fatty liver condition. I used to have pre-diabetic symptoms. I used to have edema - swelling in the feet and lower legs from excess fluids. That edema sometimes caused serious infections called cellulitis that would require hospital stays and intravenous antibiotics. I used to have COPD symptoms from decades of smoking. I used to have occasional high blood pressure and other chronic health problems for decades. All of these are gone. And they are gone because of intermittent fasting and eating high quality locally produced real foods. For just over two years, i have been eating just one good meal every day that i prepare myself. I avoid sugars, all highly processed junk 'foods' and excessive carbs - no breads, cereals, pastas, etc. I am healthier and stronger than i was 10 years ago. It is almost like aging in reverse! Barring any serious injuries, there is no need to see any medical doctors. I have no plans to see any in the foreseeable future.

My grandmother walked everywhere she went, ate mostly out of her garden which took up the better part of her back yard and worked in that garden often. I remember her taking the peels and veggie scraps out with a shovel and burying it in the garden. She drank milk, ate butter, made homemade bread every week, baked cookies and cakes and would eat the fat off of the roast along with mashed potatoes and gravy. Breakfast was eggs and bacon when or oatmeal. She had "juice glasses" that would maybe hold a half a cup of juice that she would squeeze from oranges. She had sauce dishes that held homemade apple sauce and other fruit sauces. Meat and milk and dairy were from local sources. She died one month before turning 104.

My oldest son is in his early 20's and he has type 1 diabetes. But thank God for this piece of article kzbin.infoUgkxVYhghKWmrUgXARZ_ydZTvmmcrw5L0I5i At first he thought he had the flu and was lying down on the bed for three days until his sister took him to the hospital. @@doddsalfaThanks very much for taking the time to reply with advice! While I was a vegetarian I bought the lower carb Ezekial bread that was very expensive but I love bread and it was rated low carb. I also decreased peanut butter with just enough so I could taste it. If I went for a Subway sandwich I'd get the thin wrap but it was rare I ate in a restaurant or fast food place so that doesn't really count. I did make the big mistake of having a lot of Atkins candy like the peanut butter cups that were almost no carbs but high in "protein" which was the whey protein that for me triggered gout. So I tapered that but even then I'd still get gout attacks so I stopped Atkins candy all together and the gout went away. I at the start of keto or Carnivore Diet got gout two times. I learned I'd get it once, but after that I didn't get any gout attacks, but I do take Allopurinol and maybe some day I can quit that too. My uric acid was 5.4 last time about 2 months ago. I was very dehydrated and exercise riding my bike to exhaustion creating a good workout but not drinking enough water and learned the hard way getting two gout attacks even though I'm on CD, so on CD I don't get them as long as I stay adequately hydrated. So the longest time spans ever of no gout on CD, but I'll look into your veggie diet. what kind of veggies don't lead to gout? What is your diet like? Thanks again!

He was more than just a doctor. He was an internationally recognised top researcher. He gave evidence to the US government in the hearings about heart disease and diet. He was savagely attacked as a charlatan by Ansel Keyes who was promoting the heart diet hypothesis which proposed saturated fat as the enemy. Ansel Keyes won hence the change in western diets from our traditional animal based foods to margarines, trans fats and seed oils. The demonisation of traditional fatty meats, eggs and butter continues. The results can be seen in the health, weight and fitness of the American population, closely followed by the UK, Australian and NZ populations. Other European countries with stronger food traditions have been more resistant to the 40-50 years of bad science and propaganda.

My doctor recently told me that the tests I was asking for, during my annual physical, were not necessary because I don't have symptoms. I'm 70 and generally very healthy. I told him that I had been to the endocrinologist a couple of years back and he told me to watch my TSH levels. They came back very hi. I begged the doctor for some of the tests that Dr. Berry and his colleague recommend as part of a health screening and he said no. No Uric acid test recommended. So none done. I just can't wrap my head around how these doctors practice medicine. My experience has totally been that they don't want to find out what's wrong they just want to cram a pill down your throat and damn you if you challenge or question their approach!

Sorry what's left to eat ? Doesn't it depend on what's wrong with you and what you may or may not be sensitive to ? Our grandparents and great grandparents did not have gluten sensitivities and they ate some sugar and salt but generally were healthier. So possibly gluten etc are problems now because of how wheat etc is processed or even grown ie GM. They consumed less sugar because they cooked and ate unprocessed food ie no hidden sugars. They couldn't afford to over eat either. Our soil and seeds are not natural anymore and poor quality. This will be highly significant but is not discussed.
@Cocora22

@@zerotoleranceforsataniceli4794 Well the list is very long. But you can start with meat/poultry/fish. Nuts plus any fats that are NOT chemically made. So stick to avocado oil, Olive Oil, coconut oil, ghee, butter. There's also a long list of really low carb veggies that are excellent. AVOID ALL fruit juices because they are high in fructose = sugar. Don't consume any vegetable oils. That should get you started. There's hundreds more.
@zerotoleranceforsataniceli4794
@zerotoleranceforsataniceli4794 Жыл бұрын
@@Cocora22 Thanks, I understood that. However, there's something not right that we have to avoid naturally occurring carbs incl. fruit. So I'm not sure that food science has got it 100% right. When I look around graveyards I can see many long lives were lived eating a little ( or maybe a lot!) of every food type incl. sugar but little would have been refined and even the sugar would have been unrefined cane sugar ie more like molasses. So the soil would have been better, the flour less processed and refined, no GM seeds. But also I suspect there are toxins in our water, air & food that may not be known that are bringing about metabolic illness associated with food. Why? Because we can't eat what our grandparents and great grandparents ate even if we don't eat processed foods. So maybe there is an elephant in the room that we don't see !
@Cocora22
@Cocora22 Жыл бұрын
@@zerotoleranceforsataniceli4794 I totally agree. I grew up on a country where everything had to be fresh, when I was growing up, because there was no real alternative. All the elders in my family have lived well into their 90's and very healthy minus a few exceptions and some aches and pains. In Colombia food was and in many instances is still grown without a lot of chemical enhancements. I have spent the majority of my life now, in the USA, looking to avoid foods infused with all kinds of garbage and I'm sure you know what a challenge that can be. There is a lot of information confirming that the grains used before the industrial revolution were indeed whole and not refined, now you can't even find those kinds of flours and people who have tried have great difficulty finding the seed material to replicate that kind of wheat etc. I have been off of sugar for a year and a half and on a very low carb diet. I am by no means on the perfect diet but just this little bit has helped tremendously. I do eat real food without additives but it is a real chore in today's world to eat healthy. There are so many temptations, lack of time and maybe also laziness to cook. Easier to pick the easy way out. I do love my sweets so when I hear people say that once you give up sugar for a few weeks you don't crave it....... all I have to say to that is I don't believe it. It takes a lot of will power for me to avoid sugars.
@zerotoleranceforsataniceli4794
@zerotoleranceforsataniceli4794 Жыл бұрын
@@Cocora22 Thank you for that. Do you try stevia as a sweetener ? I'm also wondering about coconut sugar because it may not be refined so perhaps it's not the sugar itself but the actual cane that is grown and especially the chemicals used in the processing. As I said ( I'm in UK) & the gravestones speak ! They didn't warn us off sugar and carbs ! but many couldn't afford to eat excessively and there were no mass produced snacks - I avoid snacks when I'm out & about 'cos they contain nothing but chemicals. Anyway, good on you to manage a low carb diet and no sugar!. I can't quite do that ie my carbs are around 100 g a day & I use honey as an immune booster every day. So I aim for portion control and not snacking and doing a minimum 12 to 15 hr fast. This appears to stop weight gain and I feel well on it & don't need meds. I just think that God didn't put us here to then poison us with the food he created for us - that may not be scientific but to me it's rational!!

I have to “face this “, etc. I can assure yo shame or being yelled at daily has not worked. I DID, however, buy a glucose monitor when I became interested in intermittent fasting. Recently I found the two medicines I WAS ON caused weight gain (1) and the inability to lose (2) weight. So again, what I assumed was my weak character flaws & failures while water fasting were perhaps exacerbated by simply not understanding. Namely, the role of sugars as presented here. Get that monitor and starting over. Wish me luck. Need both books (gave his grain brain book to a neighbor who was diagnosed with Alzheimer’s ). Thank you for your guest today. @Lying Eyes and with all due respect, keto people (politely) are misinformed. They have shorter longevity, not longer. It’s ok, I know it’s offensive but I’ve based this on lots of actual studies & books. If you enjoy books, I am happy to supply lists to prove (actual studies , science ) for enlightenment. Most keto people are interested in their weight (like Atkins) and then get sucked in (as far as I can tell & from my own experience). Tell me what you’ve read proving those who eat meat live longer healthier lives. Thank you.

I have gout. I have had it since 17 at my most fit time in my life playing on 3 soccer teams.Diagnosed finnally at 24. 7 years of hell and doctors like this who know just enough to be completly wrong and misdiagnose me. Gout caused by high uric acid serum levels is a genetically inherited disease of DNA metabolism due to the impaired metabolism of the purines in DNA. All primates have this metabolism somewhat compromised. Sugar has ZERO DNA. Fructose is not directly metabolized to uric acid as this quack aserts. Most food does have DNA in it except refined foods like refined sugar. He is conflating obesity and sugar metabolism with DNA metabolism. Some skinny people have gout. Obese patients with type 2 metabolic sydrome x likely have gout from excess food hence excess dna as well as comnpromised kidney function the inability to excreet enough uric acid given the amount ingested over time. Fat people eat more food and therby ingest more DNA and thats why uric acid is high. There is no conection to sugar metabolism of fructose which does not require insulin. The only connection is a renal one(kidney) and how having a constant high blood sugar and insulin level impairs the kidneys function to excrete uric acid. High uric acid is a symptom of another serious disease like cancer or over eating not a cause of weight gain diabetees or heart disease. symptom of problems NOT cause. Fructose does not become uric acid EVER in scientific reality.

Anecdotally, I suffered from chronic gout (Uric Acid levels) as a function of how much fructose (HFCS) i was consuming and creating metabolic dysfunction, for nearly 8 years. I would have about 2 flares each month. I started a carnivore diet in January this year and had the Uric Acid levels measured each month (decreasing from 9.2 to 5.9) by June (this year). No HFCS, Sugar or substitutes or alcohol. In March (going back in time a bit) I stopped taking Allopurinol. I had also lost 42 lbs by May. Two weeks ago I wanted to test my response to HFCS and consumed 13 grams (intentionally). I had (and still recovering from) a gout flare within 10 days of consuming the 13g of HFCS. After 7 months I was shocked and thankful that I had Colchicine and Allopurinol. So it appears that I have more work to to on my metabolic health. Thank you for publishing this video and the contribution of Dr. Perlmutter.

I have no medical knowledge but following a crash and reading a book by a woman who was in a wheelchair young from arthritis and decided to stop all the meds and use researched old remedies on diet. The key ingredient was Cider vinegar and honey in warm water first thing every morning. Within a month of being off the meds and a diet she worked out she walked for the first time in ages. So to avoid getting arthritis in damaged joints etc I started taking the cider vinegar honey in warm water every morning. What happened was that my acidic stomach and bowel disappeared and never came back. Before that just a cup of coffee was enough to cause me a problem. An older neighbor who had a few arthritic joints decided to try it and told me that a surprising side effect was that cramps in his legs at night had stopped happening. He only ate fresh organic food and didn't drink or smoke so he had a healthy duet already. So I suggested to another elderly neighbor who suffered badly sometimes from gout to also try it, and wow, it also reduced his gout to almost zero. It came back if he stopped taking it. I don't know how it works or if relevant to this discussion, but I'm just sharing my experience with cider vinegar.

@@lynnegullion-realtor2880 Apologies..I didn't see you question til now. I was taking maybe a dessert spoon at most in a small glass of water.. the honey, apparently a relevant ingredient in the mix, I added about a teaspoon ful. It wasn't exact.. in the book the woman varied what she took. She suggested anyone going to drink alcohol to take the same glass before going out to drink.. You could start with just a teaspoon of cider vinegar and I don't think it matters how much water or honey. One thing to know she said if you have quite bad arthritis is that it can take 3 weeks to a month to see a difference and in those weeks you can have more pain in some joints because - as I visualized her words - the cider vinegar is breaking down some hard stuff jammed in the joints and that's the cause of the pain..but once that's gone the joints feel easier.

Years went by doctors never treated me for high uric acid. I was finally put on Allopurinol 100 mg/day 12 years ago and still had a gout attack. I'm now on 300 mg/day of Allopurinol. Bottom line: reduce fructose, increase exercise, take quercetin, stay hydrated, reduce carbs and sodium, do not drink alcohol or drink juice or processed foods, eat meat in moderation, as they will slow down your metabolism, increase inflammation and increase fat storage. Fascinating podcast, well presented. Thank you for bringing this to public attention. What astounds me is how something so logical and dare I say obvious has gone under the radar thus far. I'm based in the UK but expect similar problems exist in the USA. Go back a few generations. People generally ate to the calendar, seasonally if you prefer. Root veg in autumn/winter, blueberries in July, Apples in late summer etc. Nowadays we can buy blueberries for example all year round. I see an environmental link here. Save the unnecessary food miles, eat locally sourced seasonal foods where possible. It is what nature intended.

I used to be very overweight. A low fat, low calorie diet didn’t really suit me at all - I lost some weight, but it seemed to be as much muscle as fat and left me weak, tired and hungry. I tried ‘The Atkins diet’ which was fashionable at the time and it worked amazingly well. 15 years later my weight is still under control and I am very fit and healthy. I remember at the time Atkins getting almost universal condemnation from just about everyone,everywhere in the medical profession or media. The ‘fat bad, calories bad, carbs good, fruit good’ mantra was not to be challenged. Seems Atkins was definitely on the right path, even if he didn’t have the full story.

I've spent the last 20 years eating the standard Western diet, full of carbs and grains, and now I'm working to reverse Type 2 diabetes and hypertension! I should have stuck with Atkins.

@@raghuarmani8341 The top things I cut out of my diet were beer, wine, (anything fermented) for vegetables I avoid cauliflower, mushrooms and several other high purine vegetables. Shell fish are absolutely off. There are a few lists of purine content in foods on the net. The best I found was Japanese. Mind you, this is a good strategy post gout attacks. You can adjust your diet slowly back as your uric acid balances out. Consult your physician about medication. Consider getting uric acid test meter they are cheap (under $100) . This way you have a better idea of which diet works for you best and your physician has a better idea too. Hope thar helps.

Now on Allopurinol, my blood pressure has come down from 149/82 to 128/72 or even on occasion, 109/68. (I should include I am type 1 diabetic for 56 years.) The proof is in the pudding as they say. I threw out my fish sauce, stopped eating anchovies and ketchup (my only remaining sources of purines and sugar) and like magic my joint pains went away. If you're having trouble with actually eating enough vegetables and fat to be full, I HIGHLY recommend you make your own mayonnaise with a healthy oil and slather it on vegetables.

Not so much that doctors are “owned” by Big Pharm as much as healcare schools are highly funded by Pharmaceutical Companies which affect the curriculum, leaving no time for relational metabolic courses. It’s not just medical schools as much as all healthcare schools. In the 1970s, a Nutrition class was a required course. This no long the case and is not even an elective. Much scientific research has been done since then, but is still not included in the healthcare curriculum. A relatively new specialty of Metabolic MDs is now available but not covered by Medicare and most insurance companies which puts it out of range for most people. Cardiologists are becoming advocates of this but one must already have the destructive process evident. Sort of too late.

Why??? Surely you must know by now Western Medicine has NOTHING to do with health of the patient at all… It’s about M.O.N.E.Y…. The System was designed from the beginning to make money off your SYMPTOMS, it’s not interested at all in curing you of ANYTHING. If your doctor were to use common sense in their practice or apply new knowledge that might actually get somewhere with your health, they would LOSE THEIR LICENSE 👈🏼

Does the 'moons' show on your fingers (excl thumbs)? If not, your thyroid is malfunctioning which impacts the liver & gall bladder. Apart from exercise and Chinese herbal meds to sort out my metabolism, I use Lugol's Iodine to kickstart my thyroid. I "paint" it on my legs (with the dropper) after a bath or shower and it absorbs through the skin: two patches about as large as the palm of my hand. Keep on with it daily until it doesn't absorb anymore within 24 hours. However, if you're allergic to Iodine, first get medical advice. When the thyroid & liver works, high cholestrol drops. Also check out Dr Berg's videos.

Thank you for such a comprehensive interview from the good doctor. This information is what I have needed for many years. I developed an addiction to sugar in my thirties and now have been obese for twenty of my 76 years. Looking in the mirror has been a source of shame and frustration that I blamed on my lack of willpower and discipline. The medical community only reinforced that opinion with comments to "not eat so much". Now, after being diagnosed with pre-diabetes (my doctor suggested eating more beans) it seems logical that I need to reduce my sugar intake to almost zero and increase my protein intake as well (more beans). This video confirms that my decision is correct but also points out that reducing my sodium level is just as important.
