I used to love eating this in Xinjiang, going out to some scenic spot with a lot of beer and baijiu, sometimes hash, slaughter a sheep and cook this up in a huge wok outside, and get the kebabs ready while it cooks. The only thing i would say is missing from yours is the yellow carrots, the are very sweet, and look great with the orange carrots, but those are even hard to get in most places in China, mainly the northwest. Wonder if you've made a jiaoma chicken yet? my favorite Xinjiang dish by far, not traditional but very local.

5 rice to 3 cups water that's to less or you have many water out of the lamb

Yes there is liquid that comes out of the lamb. Sometimes I add slightly more water (4 cups) as long as the rice is covered. Varys every time but that is rough estimates in the description.
