Uzhunnuvada
Ingredients
1) Blackgram Dal - 1 ½ cup
2) Greenchilli chopped - 4 to 5
3) Ginger chopped - 1 to 2” pieces
4) Pepper crushed - 1 tbsp
5) Salt - to taste
6) Curry leaves (chopped) - 2 to 3 twigs
7) Coconut oil / oil - 2 cups
Preparation
1) Grind the 1 to 2 hour soaked dal after draining the water well scraping down at regular intervals.
2) Set aside for 1 to 2 hours, mix all the other ingredients & stir very well 10 to 12 minutes with the hand.
3) Add salt again stir some time and shape into vada.
4) Fry in two batches in medium hot oil till golden brown.
Thairu Vada
Ingredients
1) Fresh beaten curd - 1 litre
2) Blackgram dal vada/ Uzhunnu vada - 10 nos
3) Salt - to taste
Seasoning
1) Gingelly oil (Sesame oil) - 2tbsp
2) Mustard - 1 tsp
3) Blackgram dal - 1 tbsp
4) Red chilli - 4 to 5
5) Ginger chopped - ½ “ piece
6) Green chilli - 2 to 3
7) Curry leaves - 4 twigs
Garnish
8) Carrot julians - 1 small carrot
9) Corriander leaves - ¼ cup
Preparation
1) Prepare blackgram dal vada as shown.
2) When cooled, place each vada in hot water, take out, press slightly to remove excess water. Set aside.
3) Season with the ingredients (1 to 4), sauté slightly the ingredients
(5 to 7), put into fresh beaten curd. Stirring well add salt to taste followed by the vada.
4) Swirl & garnish. Serve only after 2 to 3 hours.
