Just to help everyone else... I just tried it with almond milk and it made it more of a slushy texture because of the water content in almond milk. I think it really does need to be oat or coconut milk for this to work!!!

Add more vanilla and some softened, pitted dates (even better to blend up 1 cup dates with 3/4 water first to create a fantastic date butter/date sauce). And use more vanilla. Everyone's taste buds are different. They may not prefer things as sweet as most people.

What speed are you running the blender because it looks like it’s at a slower speed? Does it help improve consistency at a lower speed?

I think if the speed is too high then the cubes will just melt from all the friction. I haven't tried it yet myself, but my instinct tells me that a lower speed is necessary.

I just made this today in my Vitamix. Just as you did but added about 1/4 cup maple syrup. It did NOT turn out like this!! By the time it blended up, the oat milk cubes must have melted! I added more cubes since I made two trays. But it didn’t help. I poured into two separate containers to freeze it but it absolutely is not the consistency of smooth ice cream!! It’s runny!’Tastes good but like sweetened cold oat milk!! I went ahead and froze it, but it’s hard as a rock. I scrape it with a spoon and eat it. It does taste good! But def not that consistency! Maybe your blender is the secret!?? What is it? Not like I’m going to go out and buy it but just curious. Too bad.
