For the Carbonara, you will need for 5 people:
500 g Spaghetti (Majkl uses No: 5)
5 yolks
150 g guanciale or bacon
150 g parmesan cheese or Pecorino cheese, or a combination of both cheeses
1 teaspoon of freshly ground pepper

How to make Italian Guanciale (bacon)
Guanciale is an Italian bacon prepared from pork jowl or cheeks. Its name is derived from guancia, Italian for cheek. The process is based on curing with salt and fresh Italian herbs. This differs from traditional bacon recipe, where bacon is typically smoked. Guanciale is based more on herb flavors.The taste of guanciale is amazing when fried and eaten with Italian bread, or it is used in spaghetti alla carbonara, or in Bucatini all'Amatriciana.
Ingredients for Guanciale:
pork jowls (1,5 kg or 3 lbs):
1 kg (2 lbs) of sea salt
1 kg (2 lbs) of granulated sugar
1 teaspoon of curing salt (caution, should never be mistaken for table salt, keep away from children)
10 twigs of fresh thyme (or 5 tablespoons of dried tyme)
10 bay leaves
5 tablespoons of ground black pepper
1 tablespoon of garlic powder
1 tablespoon of ground coriander
1/2 litre (16 oz) of wine vinegar
