There are two versions of pho, Hanoi/northern style and Saigon/southern style. The style that you see in Vietnamese restaurants in the US is Saigon style due to all the refugees who left Saigon after the communists captured the capital. Hanoi style on the other hand, is superior in every way, because the broth is clearer (because it doesn't contain as many ingredients as Saigon's), and it has more seasoning. Hanoi is credited to finessing pho when the colonials of French Indochina were based there. And Nam Định (a province in the north) is known as the birthplace of it.

I like to say ackee and durian are the cheeses of fruits. Ackee took the texture of cheese, while durian took its notorious stench...it is called the king of fruits, but I think that "king" needs to take a shower because it NEEDS one! Fun fact, in Singapore, durians are prohibited from their MRT (Mass Rapid Transit), hotels, and other public places BECAUSE of that stench...can't blame them. Also in Singapore, you can get a durian McFlurry. Yes, that IS a thing
