I made this for my non-vegan son and it was a big hit! I modified the sauce slightly by adding a hint of Italian seasonings and a couple of roasted red peppers that I had left over. It was great! Thanks for the recipe!

I really like it that you always manage it to create a creamy "cheesy" texture without actually using cheese or other high fat products like nuts/seeds or oils.

Thank you for making a vegan recipe for Potato a bake. My mum always used to make potato bake in Australia, however lots of dairy within her recipe. now when she comes to visit me in Scotland, I can make her a vegan version!

The sauce is amazing. Healthy as any sauce could possibly be and delicious and most of all its simple, easy and cheap, that's so important to me that it's easy. Will be using it for pasta sauces and dipping bread and stuff often

I added fresh dill and I didn't have the cauliflower for the sauce and it stilled turned out so good!

I used your recipe for the alfredo sauce, to make a type of fettucine alfredo - I used spiralized celery root, broccoli, red bell pepper strips and sun dried tomato, to pour it over. I simmered all those ingredients in the sauce, until they reached the tenderness I prefer. The meal tasted decadent!

So happy I found this! After one stent 4 years ago, I just found out I have some major artery issues. So, surgery or plant based diet? Definitely plant based diet!!!! I found and watched Forks Over Knives, too (amazing!).....then Dr. Esselstyn's book "Prevent and Reverse Heart Disease"....and now you:-) I'm getting everything set up. My life transformation begins in 3 days!

@@MayorBrownn Hi CL! Besides the change in diet, I added extra workouts. I was doing Level 2 Insanity 5 mornings per week, plus lifting 5 days a week in the afternoon. I was also doing 540 sling shot push ups and 1500 sit ups per week. When I went back to the doctor the next year, they could not believe how much I had improved! I still have a way to go, but such an improvement. :-)))))))))

I have been vegan for two years, i weigh 220 lbs , my weight should be in the 160 to 170 range. My fat percentage is a crushing 31%. I have been eating alot of oil, and calories. My morning meal usually has around 1000 calories. THis week I have started to eat the way Dr. McDougall says to eat and I am limiting my fat intake to no more than 10% of my calories with starches being the bulk of my calories and no oil. I made your mashed potatoes today and enjoyed them. I will be making this dish as well, it looks like a great leaping off dish, it looks like you could layer it with spinach or eggplants or tomatoes , like a lasagna.

This is THE BEST POTATOE DISH EVER! i've made iot 12 times and have made variations, adding a layer of Vegan Meatballs and another time I added TJ's Organic Frozen Foursome Veggies. The Sauce is Divine! KASHO (aka Veggie Eddie)

Love your page ty for vegan ideas . This for me was a bit bland but I love things with a bit of spice just added cayenne pepper and all was great also used peas in the layers of onions it was quite good ♥️👍

I'd love to see a vegan, gluten-free dish like stuffed cabbage, but that might take too long for the show. Maybe a casserole of shredded cabbage with vegetables, beans, rice and maybe tempeh. I love all of your recipes!

If I added mushrooms to this dish, would I need to reduce or eliminate one or more of the other ingredients? I also thought of adding mushroom powder. I am sort of trying to mimic an old Polish Christmas casserole that also includes fried breaded fish layered with the onions, potatoes and mushrooms with a mushroom sauce made from water where dried mushrooms soaked.

the recipe looks great I can't wait to try it. where can i find miso or tahini in a supermarket? I will put them on my shopping list. and thankyou for the tip for my daughter. when I sent her to my mom's house I sent her with vegan snacks and meals for her sleepover. she came back home saying that grandma had no idea what to feed her and only mentioned salad. my 11 year old daughter then told me that vegans dont only eat salad mommy , and then she shook her head. lol. my daughter ate all the food that i dropped her off with. i dropped her off with 3 meals and a bag of corn chips and homemade corn salsa. thankyou

+yolanda kemp My mom used to be the same... now she's vegan so I know she cooks great food for my son. Funny enough my son hates salad and has never eaten it. Yet he is a healthy 13 year old lol Miso paste is usually in the Asian section of the store and tahini is often near the peanut butter or in the health food section.

+busybeeme100 I use white miso but there is no sweetener in it. You can just use extra tahini and a dash of soy sauce instead. Enjoy!

This recipe, and many of your others look amazing! I have a question though. Why no oil? That has me curious.

Oil causes inflammation in the body and builds plaque in the arteries. It is not a health food. @@shirleygoss1988 I also didn't know about the oil issue. It turns out all oils, even olive oil, inhibits the production of nitric oxide in the arteries. Nitric oxide helps keep everything moving along smoothly. Studies show that blood flow is slowed down after consuming even small amounts of oil. So, plant-based eaters sautee onions, peppers, garlic and everything else in water or vegetable stock. Any liquid works. We avoid all added oils. :)

As it is the start of the asparagus season I think any "Alfredo sauce" would be used over asparagus replacing the traditional Hollandais sauce. Living in the Asparagus Triangle means we have a LOT of asparagus to eat.
