I made this for my non-vegan son and it was a big hit! I modified the sauce slightly by adding a hint of Italian seasonings and a couple of roasted red peppers that I had left over. It was great! Thanks for the recipe!

@@MayorBrownn Hi CL! Besides the change in diet, I added extra workouts. I was doing Level 2 Insanity 5 mornings per week, plus lifting 5 days a week in the afternoon. I was also doing 540 sling shot push ups and 1500 sit ups per week. When I went back to the doctor the next year, they could not believe how much I had improved! I still have a way to go, but such an improvement. :-)))))))))

I used your recipe for the alfredo sauce, to make a type of fettucine alfredo - I used spiralized celery root, broccoli, red bell pepper strips and sun dried tomato, to pour it over. I simmered all those ingredients in the sauce, until they reached the tenderness I prefer. The meal tasted decadent!

the recipe looks great I can't wait to try it. where can i find miso or tahini in a supermarket? I will put them on my shopping list. and thankyou for the tip for my daughter. when I sent her to my mom's house I sent her with vegan snacks and meals for her sleepover. she came back home saying that grandma had no idea what to feed her and only mentioned salad. my 11 year old daughter then told me that vegans dont only eat salad mommy , and then she shook her head. lol. my daughter ate all the food that i dropped her off with. i dropped her off with 3 meals and a bag of corn chips and homemade corn salsa. thankyou

+yolanda kemp My mom used to be the same... now she's vegan so I know she cooks great food for my son. Funny enough my son hates salad and has never eaten it. Yet he is a healthy 13 year old lol Miso paste is usually in the Asian section of the store and tahini is often near the peanut butter or in the health food section.

That's a great idea! Chef AJ's video on how to caramelize onions without using oil is excellent. The audio sucks, but the method itself is fool proof and obviously healthier than the traditional and unnecessary alternative of using oil.
