I just made this and can confirm that it DOES Taste Like Chicken! This was incredible! The closest homemade dupe of any mock meat that I’ve ever tasted!! The texture & flavor were right on! I did add vegan chicken flavor seasoning... Yum!!!!

I made this tonight. It's fantastic! Thank you, Sam. * I've tried plenty of other from-scratch mock chicken recipes, from KZbin and other sources. This one, by my reckoning, tops them all. It came out tender and with just the right meaty/chickeny texture; and yes, it *does* taste like chicken. * Full disclosure: I replaced some of the water with tamari, added a dollop of vegan mayo and a drizzle of toasted sesame oil, and used a chicken-flavored veggie broth powder. * Your idea of using *silken* tofu as a seitan component is genius. One can tweak the firmness by increasing or decreasing that. One benefit of the high-soy content is that there's no "bready" aftertaste such as I've experienced with other seitan recipes. * My next venture will be wrapping the marinated fillets in spring-roll rice paper, then dredging them in seasoned flour and air-frying them. Done right, I'm thinking the softened-and-baked rice paper should nicely simulate crispy chicken skin. (So many experiments, so little time!)

Just made Seitan from scratch without much of a recipe. Made it two different ways and used one batch to make a fried chicken alternative. Honestly the potato gravy I made with the Seitan broth was the best. Will give this recipe a try once i get more vital wheat gluten. ✌

I just wanted to say that I love your version of seitan recipes. I have been making seitan for an embarrassingly long time (almost 30 years now) but yours are the best versions I have come across in all that time. I tried this recipe exactly as you did it the first time and it was great! Then I didn't have any tofu the next time I made it so I used leftover okara (the solids at the bottom of the bag after filtering my homemade soymilk--most people I know toss that part, but I'm thinking. "Hey, its soy protein! Don't waste it!" so I save it hoping for inspiration and opportunity to come along.) I used roughly the same amount that I would have used of tofu and believe it or not, it actually turned out even better!!! I know, it was incredible! I think it improved the texture so that it had more of the fibrous texture of real chicken where the tofu makes it a bit soft. You might want to try that in future recipes and let me know what you think. Hint: A bit of pea protein or chickpea flour helps with texture and flavor too--the last batch I made with okara and 1/4 cup of chickpea flour--was so spot on that my husband said he would have thought it was chicken if we had not been vegetarians for so many decades that he knew it couldn't be!

@robertsolem9234 I don't see why not. I use lots of beans in different seitan and TVP recipes, especially cannelini, navy, & black beans and chickpeas. The thing is you need to blend them up in a food processor or blender until they are a paste so you have something similar to tofu. (Otherwise it can be disconcertingly lumpy in the finished product) The juice from the cooked beans will make the paste a lot wetter so either leave it out or add a bit more wheat gluten to compensate. Tip: Save the juice from canned chickpeas because it can be whipped into a kind of eggless meringue.

I made this last night and marinaded one set in the lemon Dijon marinade. And OMGosh. This is amazing. Thee only thing I would say is that making the dough by hand is not going to be easy. I say do it in the food processor for sure. I will make these again for sure!!!!!!!!

I screwed up the 1st time I made this because I mixed everything at once.- DON'T DO THAT! I found a comment that said to mix everything EXCEPT the VWG. Once everything else is mixed, then you add the VWG. And to be honest, I only did 1/2 cup at a time. I only ended up needing 1 cup and maybe a tablespoon. Then I put it out on VWG Flour counter, sprinkled more on to keep it from sticking and only kneaded it a few times to make sure the consistency looked like the video. This time THEY TURNED OUT! I love the consistency and taste. Now that I figured out how to do it, I will be making these all the time!! Great recipe!

Oh, an alternative you can use is Xanthan gum it's more effective than vital wheat gluten, too; you only need 1 teaspoon for every cup or two of nonwheat flour to achieve the same effect as 1 tablespoon of gluten. Xanthan has a little over 2 grams of carbs per teaspoon, or 7 grams of carbs per tablespoon. Just gluten-free flour or any other flour that doesn't contain wheat. Hope This Helps😊

We made chicken strips. They were a hit, even with the non-vegan kid. The change I made was to add poultry seasoning and only half the nutritional yeast. We aren't huge fans of nutritional yeast but it does add a depth that isn't there without it.

Hi Sam, I made this recipe last Sunday with 50% tofu 50% chickpea (leftovers). I made it without food processor so I knead the dough. You know what, feels like I was eating a rubber sandal hahahahhaahah.. But taste sooo good with your sriracha marinade recipe, I will definitely make this again with 100% TOFU. Vital wheat gluten alternative would be a gf/vegan unflavored protein with xanthan gum. For every cup of protein powder or gf flour (chickpea flour is great too) use 1 tea spoon of xanthan gum.

I just made this and it was tasty! The tofu I used was actually extra firm and it ended up being more of a sausage texture because of that. I marinated it in Mcdonald's BBQ sauce and worcestershire sauce... :-D I might try one of the other pieces with a more sausage spice on an english muffin.

I added a cup and a half of tofu ooops so I had to add a ton more vital wheat gluten! Also my bouillon was liquid so in my mixer it just looked like liquid chicken smoothy! After fixing it now it's in the steamer

I’m back to say I just made a recipe where I basically braised/stewed dry soy bean curd for a long time with some similar flavorings in the broth until it really softens and it turned out like “pulled” chicken. Perfect for say a chicken noodle soup type of dish. I should actually make a video. The way I cooked my soy bean curd today turned out like a perfect chicken substitute for something like Pho Ga or chicken noodle soup. Not as much gristle as chicken but a little and you get that soft pleasant soy texture that makes up for it.
