Omg, I’ve tried so many seitan recipes over the last few years & this is the best. Easy to make & just so tasty with the right texture. I’m veggie so wasn’t sure if “real” mayo would work but it did. Thank you so much for your hard work, I’ll be trying your other recipes.

SO amazingly good. I made a big batch last week. Grilled some and then chopped some and made a delicious Guyanese style chickun curry. OMG honestly mouth watering both ways! This is great, I love how practical it is. I wonder what sort of texture you'd end up with if you folded or rolled this into a homogeneous log and carved slices off of it. It might take a bit of coaxing to get it into that shape though...

I made this tonight. My impressions; Not the ultimate chick'n, still very seitan- like (smell and taste) but good. Remained pretty white which is nice. Didn't turn brownish grey like so many other recipes. I slapped this on the grill immediately after simmering and padding dry. It stayed too soft. Never firmed up like a chick'n patty outta. Too soft. How do I make this more chewy? Improve the texture.

It will firm up somewhat after it rests overnight. Hopefully that does the trick for you. Is it doughy in the center? Only other thing I can think of is that it might need more time to cook.

What size is your food processor? I have an 11 cup Cuisinart and most recipes like this end up leaking out of the bowl in the center around the blade. Do I need to invest in a larger one? I have tried several of your recipes and they are great! Thanks for your contributions.

I've never seen baking powder in a seitan recipe, what's the purpose? and you mention that the temperature of the stock is important, and that a rolling boil will ruin it. What specifically happens?

Adding the dough reduces the heat of the stock, so you want it as hot as you can get it prior to adding it. If the stock is too cold it will spend the cooking time heating the water to the cooking temp, if that makes sense. Once the dough is in you can't just blast the stock with heat or else it will ruin the seitan hence starting with hot cooking liquid.

I'm not exactly sure what happens, but my guess is that if it is too hot, water inside the seitan boils and causes large air pockets which results in spongy texture.

Can you give an estimate of how much canellini beens and their boiled liquid is needed? I don't have access to canned canellini beans, so I'll have to boil them myself.

Great question. The can I used was 425g total, and was roughly 250g cooked beans and 175g bean juice.

I've never done that, but you could just knead it a a lot before cooking. Essentially does the same thing. Good luck!

I've found Anthony's brand VWG has less of a gluten taste if that helps! I also add up to 1 tbsp of ACV and it also helps 😀

It's very good, even better than many low-quality chickens. However, in terms of taste and the feeling in the chew, it's nothing like chicken. We are dealing with an alternative that should not be called "vegan chicken". FR => C'est très bon c'est même meilleur que bien des poulets bas de gamme. En revanche, au niveau du goût et de la sensation au niveau de la maĉhe, cela n'a rien à voir avec du poulet. On est sur une alternative qu'il ne faudrait pas appeler "vegan chicken".

Vegans are not against grocery stores, they reject the meat itself. Completely different. And in your example if you reject the apples themselves, it makes no difference who sells them.
