My grandfather was diagnosed with cancer at the age of 64. He had surgery and was told he had 6 months to live. He told the doctors where to go, adopted a plant based diet and lived 33 more years.Great recipe and facts. I just meet a family in Yokahama Japan that all eat vegan because the younger brother in the family has sever food allergies to animal proteins and dairy products. He also had heart issues and respritory issues. The doctors in Japan said that he would be sickly his whole life and the mom just could not accept the fact. She researched herbal Chinese medicines and then diets and found Veganism. She began feeding her son vegan meals and his health improved dramatically. The whole family including his older sister (who now works in a Japanese orphanage, bless her sweet soul) supported the brother and only ate vegan food. They showed me many vegan and vegetarian places to eat out in Japan! I was really amazed by their story too ^-^

Yesterday, St. Paddy’s Day, he wanted corned beef and cabbage and mashed potatoes, “not vegan!” His other grandparents are Scottish and have made that for him. They moved back to Scotland so no more meat for him. I ordered it for him. He didn’t like it barely ate the meat. I made this tonight. He practically ate the entire thing! Only four slices left. I made this yesterday for my anniversary dinner. I followed the recipe to the letter and it turned out great! The texture was perfect, the flavor was superb. I had broth left so I told my husband that if he liked it I would make another. He took one bite and said “yes, make another one” so that is whatI am doing now. Now we can’t wait to try Connie’s other recipes, the crispy duck and vegan scallops are high on the priority’s list. Again, Thank you so much Connie for sharing!

Funny she wrote that she stopped eating meat. yet she called me a lia because I pointed out what the meat industry does to make thier meat aatractive to peoples taste buds. No one wants to eat dark aged meat. So they use stuff to make it that pink or red colour. and that something most of the time is not good for us.

Connie I truly LOVE your recipes. I've made the vegan scallops, the vegan crispy duck, I didn't have any soy milk powder so I used cocconut milk powder and it came out delicious. Ive made both of your buffalo mozzarella 's the one with agar agar and the one with kappa carrageenen love both, and thank you so much for sharing how to make my own mushroom powder, and your beefless powder. This looks amazing! I've been vegan for a few months and prior to becoming one I was a heavy meat eater. Even now I occasionally crave meat. Some people get creeped out if vegan products look too much like the real thing but being fairly new to the lifestyle, the more realistic it looks the better. I will try this recipe this weekend. Hi Connie, I've been making one of your "Corned Beef Briskets" about every other month for the past three years. I have also tried recipes from many other chefs - Connie, your's is the best and the original! I've often changed the spices on the outside to make it more smokey, sweet & sour, BBQ... on and on. I think you mention this, but serving it sliced thin (cold) then reheating it is the absolute best! When I do this - my guests just think I've lost my mind and started serving non-veg/vegan. I get why people can be grossed out by realistic looking vegan substitues for animal products, but such recipes are REALLY helpful when we want to introduce our cuisine to non-vegans for the simple reason - traditions and habits are not easy to change. Especially those ones that have been implemented in our society for so long. One should make small steps.. Very few people turn vegan overnight without struggles of some sort. This is a great recipe. Thank you. I added my own spin with the mango pudding as the center piece. Bottom layer is vegan graham crackers drizzled with vegan butter. Then a thin layer of a mixture of vegan sour cream and cream cheese with vanilla and a splash of bourbon infused maple syrup. The next layer is the heart of the dish-delicious mango pudding. Topped with a blackberry reduction sauce (with seeds)and a sprinkling of montmorency cherries infused with raspberry liquor. I made personal size portions because of the richness of the dessert. Yes, I have a couple friends with cancer too. It's hard to talk to them about it because that is a very sensitive issue. I do see that one of them is already aware of the effects of eating meat, but is so addicted that she wouldn't even stop eating it to save her own life. It's heartbreaking :(

I had to add gluten+flour to the mix so I could knead it, did I put too much ? It looks like the texture was the same as yours... Also, I got a more red "meat", I guess I put too much beet :) thanks anyway, awesome recipe.

OH smoking it sounds wonderful! I always say I want to get some kind of smoker yumm now u have me thinking of future cooking plans!!! :D ...If you had a denser meat it means u would have needed more liquid and if reder could me bigger beet :) But I wouldn't worry play around with ur recipe and get that perfect texture u like. :D And thank you!!!

I agree, the smoker probably dried it out. Remember that smoked meats are fatty cuts that are also basted throughout the cooking process. Try using powdered or liquid smoke instead and baste in the oven covered in a watered down BBQ sauce?

oh Connie, there is no reason to not go Vegan there is such a variety. I've never owned a slow cooker, more like the pressure cooker kind of person, do you think I could set it on low pressure and it would work? or just, slow cook it on top of the stove? I know you will say experiment - but I would like for it to turn out great (Easter) thank you friend!

not sure about the pressure cooker if u do try ( I don't have one ) let me know!!!! But yes if ur making this for Easter... I cooked it on the stove for 30 min. covered on very low then in the oven for 1 1/2 hr. at 275 heat and it works out great!!! And thank you!!!

Connie today they have safety measures, they won't blow up, it is the best way to cook beans and grains in quantity - there is the Instapot, that is electric, personally, I have a stainless steel one, a Fagor Duo

The thought of consuming a hunted or imprisoned sentient beings central nervous system and veins snapping back at me while I try to tear the cooked flesh from it's bone is not enjoyable. Nor are all the *warnings* that come with eating meat. Like you need to use bleach to clean up...gross. And the smell of rotting flesh days old in your intestines are why so many people are sick and overwhelming the lacking healthcare system. Besides every genius in history chose to not consume flesh, I'd rather eat like a genius than a caveman;)

I made this tonight and made it exactly as you described. I used porcini powder which is the only mushroom powder I could find. Otherwise a quick atop at the bulk store in Pointe-Claire was all I needed for a couple of tablespoons if pickling spices and jerk seasoning. I had everything else. It was awesome. Vastly superior to my old corned beef recipe. Thanks for sharing this.

Hi Connie, I just made your seitan "corned beef" recipe that you gave your tutorial on. I let it cool enough to put it in the fridge and it wasn't completely cold yet, but cool & I must say that it is delicious!😀😃😄😆😁. I am so happy that I found your channel. I have watched several of your videos and you are so inspiring. I haven't even bothered watching other cooking sites b/c I am really hooked happily with your site. I want to try some of your other recipes, & I am really interested in trying many of the cheese making tutorials. I noticed that you took off many of your tutorials, & I really like & appreciate them. I learn more than with the no talk videos. I cooked this today. Even though I forgot to put the bay leaves in the unbeef stock and ran out of maple for the frying stage, it was delicious. I will definitely make up more. The addition of beetroot is great for health benefits and then there is the excessive protein that comes from vital glutton flour. This is far superior to a lump of beef and a lot cheaper. Thanks for the slow cooker tip, by the way. That is definitely the easiest and best way to cook Seitan.

I"ve been making Seitan for about 10 years now. I wanted to share something that I have found to really give the seitan a better texture. I use a microwave pressure cooker to cook the seitan dough after resting for 30 minutes. You can make this with either patties or as a loaf. I use a Nordic Ware Tender Cooker but Tuppleware also makes one and I have never tried it but I love my Tender Cooker. You can still make your broth with your seasonings. It takes 25 minutes in the microwave and natural aspiration (don't release the steam till it goes down naturally). The texture is just so much better than any other cooking methods I have found.
