VEGAN DOLMA😍👌🏻
I have already prepared them for you with meat and rice, and today we will prepare a delicious vegetarian option - yalangi.
⚫INGREDIENTS:
1kg pickled grape leaves
450g round grain rice
2 red peppers (280g)
3 tomatoes (460g)
2 onions (280g)
150g parsley (1 bunch)
60ml lemon juice
150ml olive oil
80g walnut
160ml pomegranate syrup
1 tbsp dried mint
2 tbsp tomato paste
2 tbsp pepper paste (not spicy)
1 tablespoon ground coffee
1 tsp seasoning "7 spices"
1/2 tsp sugar
1/2 tsp lemon salt
Salt to taste
⚫COOKING:
STEP 1
Rinse the rice well and soak for 30 minutes.
Meanwhile, finely chop the tomato, onion and red pepper.
Wash the parsley, dry it and chop finely.
Chop the walnut.
In a skillet over medium heat, add olive oil and sauté the onion until softened.
Then add tomato and pepper paste, mix until smooth. Then add red bell pepper, tomato, rice, pomegranate sauce, dried mint, seasoning "7 spices", ground Turkish coffee, lemon juice, walnut, salt to taste, lemon salt, sugar and mix until smooth and cook rice until half cooked over low heat. Add parsley, stir. Let it cool down a bit.
STEP:2
I have marinated grape LEAVES, so it is necessary to soak in water from excess salt.
We spread the filling on the inside of the grape leaf (on the NOT glossy side), the filling, tuck the edges and roll tightly with a tube.

STEP:3
Spread a few grape leaves on the bottom of the pan to prevent burning.
Next, lay the yalanges tightly in a circle and cover them with a plate suitable for the diameter of the pan.
So you can be sure that not a single leaf will unfold during the cooking process.
STEP:4
In water, dilute tomato paste, pomegranate syrup, salt, lemon salt, mix well and pour grape leaves so that the broth covers the plate.
Bring to a boil, then reduce the heat to a minimum and simmer for about 40 minutes.
If the grape leaf is soft, the rice is cooked, then it's ready.
