When in Vietnam, we used to save the spinach/bean sprout water and after it cooled a bit we'd put lime or lemon in it and drink it. It was delicious and very healthy.

Ever since I bought my first (small, like 100g) lil bucket of gochujang, I have found every brand tastes a little different. The first one I bought was straight on hot. The one I'm going through right now (the same as you, I'm pretty sure I recognize the bucket) is much more fermented and the spicy is more round. I love it. So definitely try around with different brands!

I really ought to experiment with more brands! I go through gochujang pretty slowly (when I'm not in a bibimbap phase haha) so I don't have enough overlap for me to remember the different flavour profiles haha. I did see a specifically Vegan certified gochujang once though! I might buy to try it out.

Omg I can't wait to try this once I find one of those stone bowls. When you first posted this recipe teaser on your IG, I attempted with what little info I had in a cast iron and it was definitely a good time but felt more like something I created rather than something more traditional.

There are japanese bento containers like that I've seen locally. Also meal prepping for several days while tiring makes the other days so much easier. Been working on being vegan. 2 weeks and counting so far. I just tried a red lentil flatbread and other than needing a better non-stick pan I think I found a lovely and high protein replacement for store bought tortilla shells and taco shells. And if I could remember the green onion/scallion pancake video I watched I'd link that too. LOL guess I'll have to binge watch all the videos again. XD

Oo congratulations on making the change!! Making sure you have a fairly balanced plant based diet can be kind of daunting in the beginning, meal prep definitely can help with that decision fatigue in the early days before you figure out your pocket picks of easy weeknight dinners for sure. Nisha Vora (@rainbowplantlife) has an Instant Pot vegan cookbook that has a ton of amazing recipes that are good for batch cooking, and my friend Jackie Sobon from @VeganYackAttack also has a vegan meal prep cookbook if you want to check that out! Personally I can never really meal prep, I end up batch cooking maybe once or twice throughout the week and then I just eat leftover or make quick soups/stir fries haha.

I’m with Eddie on the size of zucchini. The smaller and overcooked, the better. Also, mushroom is pronounced “buh” (like the first part of the word “ball” if that makes sense) and then shut without the h. Buh-sut.

Lisa, do you find the beyond ground still has its inherent taste through this recipe? I find I can't "cover up" the inherent taste enough to make the dishes I make with it tasty. All I ever taste is slightly smoky fast food burger taste!

Hmmm I think because it’s only a scoopful of the meat mixed in with everything plus the gochujang sauce that you don’t really notice any particular “beyond” flavour if that makes sense!

Is that how bibimbap is generally served? Sometimes when I order bibimbap in restaurants, some of the components are hot and some are cold (which I find kind of weird).

This is dolsot bibimbap, specifically served in the hot stone bowl. Since bibimbap is made with pre-prepared banchan (the side dishes) it makes sense that some of them are cold and some are hot. I like everything to be hot which is why I love the dolsot experience :D

It looks amazing, but white rice is not the whole grain. If you substitute with brown rice then this will be vegan bibimbob!

@@Thevietvegan aroma is not vegan it's in some egan products i never buy soy sauce bcueae i read the ingredients i google the ingredients everything rhat is plastic is not vegan plastic is not vegan aroma is not vegan ... E-Numbers are (mostly) not vegan some are ... If Soy sauce was vegan i knew it i'm vegan since 10-15 years or longer i stopped reading the ingnredients of soy sauce i just don't buy it because i know it is not vegan alao thise Dürüm -Wraps are not vegan too even they say it is because e-Numbers and Aroma are mostly not vegan .. Aroma is the worst it is addictive like cocaine makes you aggressive makes you hungry lowers your vibration is designed to make you sick ... I allways read the ingredients because sometimes they change them i hope i'm gonna find that vegan soy sauce one day ..8
