Hi Lisa! That looks so delicious! I've only made japchae by boiling the noodles, so I'm going to try this method of soaking them next time. I agree that Korean food is great for meal prepping. I've prepped banchan and used them then for japchae, bibimbap, and lettuce wraps before. If you have any other tips about using banchan in various meals I'd love to hear them! Hope you're feeling better!
