This looks wonderful, Liv. You'd be surprised to know that in India this is a staple breakfast. We make the "omelette" here using all kinds of dals. It's called cheela and we serve it with green chutney, raita (made out of yogurt, must try) or ketchup. It's quite filling and packed full of protein and other nutrients.

@@caraowens5905 Absolutely, make sure to add a little bit of oat flour/buckwheat flour to the batter. You could also, additionally for some real amazing flavour, add half an onion into the food processor when processing the red lentils. Red lentils have a tendency to turn a bit dry once cooked so adding onion is a tip that's really going to help.

For scrambled eggs add 1-2 tablespoons of tapioca starch/flour to the mixture in the blender. You can dissolve in some water before adding to a blender or just toss it in just before blending. Also, you can use any type of dried lentil to make these (just watch out if you want an egg color....not going to happen with green lentils 😉)

It’s not lentils. It’s MUNG BEAN, they look similar but it is a different bean. It is yellow when split. When while they are green. Completely DIFFERENT bean.

Nearly. Just Egg uses mung bean isolate, which is essentially the protein from mung beans with a lot less of the fibre, so it's less "floury" when it cooks in the way it coagulates--with more fibre it's a bit closer to a crepe or pancake than an egg. But, it's still a great and cheaper option, no question.

Socca is a type of thin unleavened pancake, flatbread or crepe made with legume flour. It has other names in various regions of France and Italy (farinata, Panisse) and can be made thin or thick with various flavor additions. It is naturally gluten-free and grain-free and can easily be used as an omelet substitute, flatbread or pizza base. Similar preparations are also found in other cuisines with variations in methods of cooking and forms. Legume flours are amazingly versatile and worldly ingredients! Socca Bread needs just 2 main ingredients, legume flour and water. For an Italian omelet flair, I add salt, Italian seasoning blend, garlic powder, onion powder, red pepper flakes (and maybe a pinch of turmeric for color if needed) for flavor and cook it on a skillet or bake. I prefer the stovetop version. It is easier and quicker and you can adjust the thickness and crispiness as you prefer. Saute your favorite veggies and then add your batter to the pan for a vegan omelet or make a classic French omelet by cooking and then adding cooked, fresh veggies, or cheese to one half and folding the other half over them. Slice up the socca and serve with dips or just olive oil. Or top with pesto or chimichurri and veggies and bake for a pesto pizza. Legume flours are generally available in grocery stores, ethic.markets, and widely available online.

Just finished making this for breakfast it worked out so good I had to leave a positive comment I did onion mushroom wilted spinach and a Sprinkle of tvp bacon bit and cheese omelette. I made one for my wife first and she loved it. The only alteration I did was add a teaspoon or so of tapioca starch, not sure what it did or if it did anything to help. I did notice people complain about it falling apart and sticking. Experiment with a lower heat and also do it exactly how she did waiting for that top not to have liquid surface and it will work. The texture is good and even though it doesn't taste exactly like an egg it definitely stands on its own and may be better. Minimal or none Bean flavor as compared to the chickpea variation.

Okay, I just have to comment on this one again. I made it again today for breakfast with what was left of the batter from yesterday and it was phenomenal. I was vegan for two years and now vegetarian and in that time this is the best meat alternative recipe/ product I found in fact I think it's better than any omelette I've had before at a restaurant. Again I just did mushroom onion and wilted spinach just like she shows on the video with the exception that I added TVP bacon bits on top of the wet batter. Make sure to run medium-low and put on that lid until there is no liquid on the surface. After I flip it then I add one slice of havarti cheese distributed evenly and also add some small diced roma tomato. When that side sets up I fold it in half just like she does so that the tomato and cheese are on the inside, salt and serve. Freaking incredible. I skipped the BlackSalt this time and I think it was better without it who needs that Sulphur flavor as this will taste better than an omelette anyway. Okay so has anyone tried to thin this and make French toast?

Gotta say, I was doubtful.... but jumped in anyway. It was really good! So, thank you for sharing. I didn’t buy special split mung beans because I wasn’t sure I was even going to like the omelette.. I used Red lentils I had on hand. Worked fine. I also eliminated the oil which was also fine. I keep dried shiitake mushrooms in the freezer so pop those in with onions, kale spinach...yum. Tried it this morning and it's the best thing ever! So delicious and filling! Since I try to avoid oils, I added more milk to the mixture instead and used a non-stick pan. Turned out great. Genius!

My favourite after school snack growing up as easy french toast. I would just crack an egg, soak bread in the egg, add some cinnamon and fry it up. I wonder how this would do for french toast. The recipes all look amazing!!

As Ashita Songara has mentioned , this is a years old mix and is used differently in various parts of India. I make it soft by adding some water and vegetable oil instead of milk. Though our lentil curries have gained a global reputation, we make many other dishes with different lentils using different techniques. I make this with mung bean flour and chickpea. To add the egglike texture to it. I will try it with mung bean flour only and see how it works. I like the blend I found. It is the closest to egg I have gotten.

If you mix in a little whipped acquafaba (chickpea water from a can of chickpeas) to the egg mixture going into the omelette or western, you get a much fluffier mixture, close to a fluffy egg omelette.
