GINGERBREAD CINNAMON ROLLS
Dough:
3 cups flour (I used 2 cups spelt flour and 1 cup white flour)
2 tsp instant yeast
2 tbsp brown sugar
1/4 tsp salt
1 tbsp cinnamon
1 tsp ginger
1/4 cup (60ml) melted coconut oil (or vegan butter)
3/4 cup (180ml) plant-based milk
2 tbsp molasses
Filling:
1/4 cup (60ml) melted coconut oil
1/2 cup brown sugar
1 tbsp ground ginger
1 tbsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
- Bake for 15- 20 minutes at 180ºC
Glaze:
1 cup icing sugar
1 tbsp plant-based milk
1 tsp vanilla
- mix together until you get a smooth slightly pourable consistency

Cinnamon Rolls are common sweets here in Sweden. But I never made with gingerbread spices before and definitnely not in a oven form :) But I seen its been a bit trendy over here this year to make different mutations of traditional bakery. Maybe I try your recipe this weekend even if I try to avoid yeast. But perhaps I try make them with baking powder instead. As its possible to make sort of fast Cinnamon Rolls this way.
