I have made a sauce using the lupin flour. It turned out very good. I used home-made not strained soy milk even and it turned out delicious. I used it as a base for vegan "Gorgonzola" sauce. Fermented bean curd for taste (the one from Shin-Chuan with sesame oil) and kale for optics (to imitate the mold look). I will use that sauce as a base for different sauces ("Gorgonzola", celery, fishy - nori and kombu, mushroom powder) on Christmas for our families traditional raclette. Thank you so much for the inspiration.

I’m watching this at 6 am. I’m so hungry and it looks so yummy!! Thank you for sharing. By the way, surely I’m not the first, but I’ve started putting my rehydrated soy curls in my old salad spinner. Perfect! And, since they don’t stick, it’s an easy clean after.

I, too, am a wuss about the boiled shroom method, though I trust the Stache! It's just such a violation of everything I ever learned about mushroom cooking! This is a wonderful looking pasta bake for the early autumn, and though not low-carb, I like the idea of parcooked zoodles and lupini flour. I might just make the sauce from lupini beans, or half and half with cashews. Thanks so much for posting, Mary!

I always appreciate the use of much "cleaner" soy curls (instead of heavily processed store bought faux chicken). Not saying I don't occasionally eat, but I try to keep it occasional. I always rehydrate my soy curls in veggie or chicken-ish or nooch broth. Really makes a difference.

this is perfect! My teenage son is pre-diabetic and controls his blood sugar(and weight) right now by watching sugar and carbs and my husband and I are vegetarian. I can tweak this recipe a bit (use real cheese or cream) and would be something we all can eat, lol. soy curls are low carb, I love them! I wish i could get them locally (but have to rely on amazon).

if you make it with regular pasta noodles, it will freeze fine. Zucchini noodles are the worst when frozen (imo)

I love, love, love your channel ❤ 🔹For less carbohydrates > use macadamia (4 in 100), instead of cashews (30 in 100). It's fatty like cashews, but very few carbohydrates. Yes, macadamia is expensive >> so make half and half with grounded almonds (9 in 100) and you'll get an excellent cheesy cream for the sauce 🏆 ⏩ Q : is there a low-carb vegan cheese you like, witb good ingredients that you recommend? IMO soy curls are the best vegan meat substitute and they have just 1 ingredient. All you need to do is cook them in chickenless stock or beefless stock after rehydrating and they’re amazing, but there are plenty of recipes on youtube of more creative ways to use them. I think TVP also works the same or similarly, just doesn’t come in the strip format 🤔

Butler's Soy Curls! Actually, I think only Butler's are "soy curls" made from whole soy beans. All others are some variations on TVP and not are not really the same thing.

@@marystestkitchen I am currently trying low carb vegan to try to control my diabetes. I tried hclf and my blood sugars are all over the place. With low carb I use less insulin and my blood sugars are more even. But I resist keto because I need more protein than allowed on keto, and I don't do well with 70% fat! I guess I have to find my own way.

@@BettyHorn Oh I know the pain of hclf! I tried it for my tendonitis and it got SO much worse. One experience I'll share is you don't necessarily have to stick to the regular keto macros to be in ketosis. I just concentrate on having no starchy carbs, plentiful protein (especially since plant-based protein is less bioavailable) and be a bit free-handed with the olive oil ;-)
