even with only the 2 of us, I do some meal prep. I always do batch prepping (beans, lentils, grains, shredded cabbage & carrots, plus I roast up some potatoes and some beets each week). I loved seeing how you and the kids do your meal prep. What a great sense of accomplishment for them.

@@thehaipath I ended up with SO MUCH. Okay but here’s what I did, since we are more vegetarian and not full vegan - I made a cheese sauce with cheddar, water, olive oil, and flour. Then combined with mac, layered in dishes with the chili, covered with breadcrumbs and cheese and baked it for about 30 minutes at 400. Oh boy, let me tell you - maybe the best thing I’ve ever made. Thank you again!

@@thehaipath I think the sauce could be done with nutritional yeast? The self-rising flour I used in it made it crisp up in the oven. I also have a big pan the way you made it, and both are just as good. I will check out the potatoes for sure! And trying the burritos in this video. Making hummus, all that - definitely inspired.

@@thehaipath hi thanks for writing me back:) yes I’m plant based, and omgosh, I’m meal prepping for the first time; plus I like to experiment, like you🥰..I’m just so curious, and I love to see how left overs can be repurposed. So like, last week I made this vegetable broth from everything Inhad on hand - turnips from the food bank, sweet potatoes, onions, carrots -these amazing stewed vegetables, remained after all-day simmering, and seasonings, and straining for a broth to knock your socks off. I refrigerated the stewed vegetables just because they looked and smelled so savory from all the seasonings. So last night I had an idea to pulse them smooth, and to my shock it looked texturally, just like ground beef had been added- the shape in all😵 so I added a 10oz tin of tomatoe sauce and 10oz tin of cubed tomatoes and seasoned again and it looked just like a bolognese I’d been cooking all day. I loaded it with fresh garlic, and put it in the oven overnight at 170 degrees and this morning I’m prepping a layered spaghetti with it, with kelp fettuccine noodles, and (9calories for the whole pkg of noodles😍) a dusting of nutritional yeast and I’ll bake again on super low just to meld, and then cut into serving sizes to freeze for my dinners next week. I wish you could smell the aromas from the “bolognese” and I’m just so excited to be prepping for the first time and I’m so thankful for how it supports my new healthy lifestyle❤️🙏🏽 thanks again !

This looks great! I’m curious why you put lettuce in the burritos if you are going to cook and freeze them? I assume the lettuce will be so wilted and soggy. Any suggestions on how to prevent that?

Hello there! When we made these burritos we weren’t actively thinking about the wilting of lettuce 😅 however when we warmed them up the kids did not complain about any wilted lettuce, seems like the ingredients all just mashed together and it was fine. If you’re not into that then you can of course omit it and serve a salad on the side, we just like to add some greens and veggies in as much as possible 🥰

We believe eating a plant based diet is the healthiest way to live, and as parents it’s our responsibility to raise kids in the very best way we can think of. And as parents we are responsible for their health and safety. We’re not sure if you assume being plant based or vegan that kids are missing out or just not getting nutrition? Because we guarantee they’re getting way more nutrition than a lot of meat eating families out there and they’re definitely are not missing out on anything. What specifically do you think they don’t get to enjoy? Cakes? Cookies? Junk food? There are lots of snacky foods the kids enjoy weekly too on top of kid friendly foods at home

This little kid should not work with that big sharp knife and hot oven and hot food. She made her work like a maid. The kid looks so exhausted. This is not okay. The baby didn't help, actually she cooked like an adult.

That kids knife skills are excellent! She’s clearly been taught from a young age which is fantastic. Kids are generally more capable then most adults allow them to be for fear of the hurting themselves - sensible risk assessment is all that’s needed and clearly this mum has it down and has taught her kids well
