Fun Pasta
Preheat oven to 425 degrees F (on convection if you have)
Chop up zucchini, bell peppers and onions and add to a parchment lined baking sheet.
Season with Italian seasoning, smoked paprika onion powder, salt and toss with grapeseed oil.
Roast for about 20 minutes on convection until tender and done
To make the sauce: Add onions, bell pepper in a pot with grapeseed oil, add Italian seasoning, 1 can of diced tomatoes, salt and coconut milk. Cook for 10-15 minutes.
Start boiling your pasta until al dente. Once done, pour sauce over pasta, add roasted veggies, spinach (optional) and toss. Serve as is!
Coconut Curry
In a pot, chop up 1 onion, 2 sweet potato into small cubes, 1 cup cooked chickpeas and small cauliflower. Sauté in grapeseed oil and and salt.
Add 1 bottle of Thai curry paste and diced tomato and toss. Add about 1/2 to 1 cup of water to cook sweet potatoes for 15 minutes until tender. Once everything is tender, finish off curry with coconut milk.
Serve as is, on rice or some bread!
Quinoa Fried Rice
Soak quinoa overnight to assist in digestion, then drain and rinse on the day of.
In a pot, add onion, carrot, bell pepper, ginger and garlic (optional) and sauté with some salt.
Add quinoa, and any vegetables you like. We used cabbage and Swiss chard.
Drizzle sesame oil and coconut aminos, adjust to taste.
Add water just to cover the quinoa, bring to a boil, cover and simmer on low for 20 minutes. Then turn off the heat and let sit for about 15 minutes. Beware of water levels, you should check it every once in a while to make sure you don't burn it.
Once done, serve as is or with some tofu or protein of your choice.
Satay Noodles
Preheat oven to 425 degrees F (convection setting if you have)
Chop up cauliflower and broccoli for roasting, toss with grapeseed oil, salt and curry powder (optional)
Roast vegetables for 20 minutes or until tender
Boil long noodles/pasta until al dente for about 7 minutes in salted water and once done, reserve 1-2 cups of pasta water to use later
Satay Sauce:
2/3 cups peanut butter or almond butter
3/4 cup coconut aminos
1 can coconut milk
1 thumb ginger chopped finely
Garlic (optional)
Juice of 1 lime
1 tbsp onion powder
Hand blend sauce until smooth, toss with noodles and roasted vegetables. Add spinach and chopped cilantro if you wish and enjoy!
BBQ Sweet potato and Bean Bake
Preheat oven to 400 degrees F (on convection if you have)
Chop sweet potatoes, the smaller the faster it cooks
Drain 2 cans of beans (you can use any type of bean, we used cannellini)
Add 1/2 a large onion chopped, sweet potatoes and beans in a 9 by 13 baking dish
Season with salt, Italian seasoning, cumin, onion powder, smoked paprika and ancho chili powder.
For the BBQ Sauce
In a saucepan, add 2 tbsp grapeseed oil, add seasonings Italian seasonings, cumin, smoked paprika, ancho chili powder, onion powder.
Add 1 can of tomato paste, 1 cup of water, 2 tbsp coconut sugar, stir and cook on medium for about 5 minutes. Adjust water to make a sauce consistency
Toss the sauce into sweet potato and bean mixture, give it a stir and be sure to add water if needed to the level of sweet potato/beans.
Roast in oven for about 45 minutes until sauce is reduced and sweet potatoes are tender.
Enjoy as is or on some rice and roasted vegetables on the side
