Those empanadas look delicious. I definitely need to try them. I know the sweet potatoes were used because of nutrition, but would it make a lot of difference to sub that out for a normal potato, or even another root veg like carrots or parsnip?

It won't make a difference. In Colombia we make them with white potato,red meat or chicken or vegan. We also use maize meal instead. It's great as it's gluten free and can be found in Asian shops or latinoamerican shops if there is any in your town in England.

I'm in Canada and on the East Coast root veggies are very easy to get and cheap. Is maize meal like what we would refer to as cornmeal (what Americans use for cornbread or grits) or more like the masa flour used for tortillas?

Potentially Zwilling non stick (PFOA-free coating) or Thermalloy: but I am in Canada so we have some different options. Check out a restaurant supply store for the best options :) (I love french steel).

I LOVE spicy food. I never noticed chilli seeds making food hotter. I leave them out though because I don’t like their texture. Always a nasty clumpy surprise to bite into one

I wish i could agree leaving out cheese and adding bread would be the trick to weight loss for those with diabetes or insulin resistance. Sadly, it is the other way round for some bodies, for sure.
