This is a very easy and quick dish to make. For best results use cooked rice that is cold or from the refrigerator that has been cooked the night before.
Ingredients :
2-3 Cups of cooked and or cooled rice
3 Tbs of Olive Oil
1 Green Capsicum/ Bell Pepper
200 gms Chestnut/Button Mushrooms
2 Tbs Rice Wine Vinegar
2.5 Tsp Brown Sugar
2 Tbs Soy Sauce
1 Vegetable Stock Cube
Method /
- Clean and Slice the Mushrooms
- Wash and Slice the Green Bell Pepper
- Add the Olive Oil and heat in a pan or wok
- Add the diced Green Bell Peppers use your spoon to stir
- Add the Mushrooms
- Add the vegetable cube
- Add the 2-3 Cups of Cooked and Cooled Rice and keep stirring in the pot
- Add the mixture of Rice Wine Vinegar and Brown Sugar and keep stirring
- Then add the 2 Tbs of Soy Sauce
- Cover and let it cook for 5-7 minutes
- Serve while hot.
PS: You could add 1 tsp of Pilau Masala Spice mix for a spicy taste.
