Ingredients :
6 Cups Whole Wheat Flour
750 ml Hot Water
1.5 Tsp Himalayan Salt
1/2 Cup + Separately 7 tbs Sunflower Oil
Method/
Sift 6 cups of Wholemeal Flour
Add 1.5 Tsp of Himalayan Salt
Make a well and add 500ml of Hot Water
Use a fork to stir as it is pretty hot to use bare hands
Add 1/2 Cup of Sunflower Oil
The add the rest of the 250 ml Hot water
While mixing the dough, just to get it right do the dough test :
Take a Pinch and test the softness, it should slide off your fingers when ready.
Use your hands to continue with the mixing, be careful as it is still hot/warm ...
Use a fork when necessary and keep on kneading
You can now text the texture
Once the dough is ready , add a tbs of Oil and coat the dough, then
Cover and let the dough sit for 30-45 minutes
When ready, prepare your surface for flattening the dough
Add 6 Tbs of Oil and Spread it on the flattened dough ensuring to coat the surface well
Cut the dough into strips for individual chapatis
Roll up each cut section and flatten then place on surface with some flour on it
Clean and prepare your surface once more to roll out the individual dough balls for cooking
Add flour onto surface, place ball of dough and flatten it with a rolling pin.
Prepare the pan for cooking
Put the flattened dough onto the pan and let it heat up each side
Turn the dough on its side as it stars to brown, as it heats up it also rises
Once browned on both sides, then brush with some sunflower oil on the top, then turn it
Coat the other side as well , let the chapatis brown and cook and set aside
Wipe your pan and continue until you finish all the dough balls.
When done plate up and serve with some mung beans in coconut sauced.
