I really love how you always emphasize the fact that we should taste our food. Sometimes people get so caught up in recipes and exact measurements; yes while recipes do serve their purpose - cooking is a lot more about feeling your food. In short, I love how more "organic" you are when it comes to your recipes. It gives a much more relaxed vibe!

If a noodle dish looks like it's "clumping" too much, I always find that switching to a pair of (bamboo) chopsticks in each hand gives great control to lift, separate and toss the ingredients through without breaking up the noodles too much.

Thank you so much for this recipe! I am Filipino and transitioning to vegetarianism, and was getting worried about satisfying my Asian food cravings. It seems like so many of my favorite Filipino, Japanese, Chinese, Vietnamese, Thai, and Korean dishes rely on meat and/or flesh-based products (like fish sauce or katsuobushi). I have made this a couple of times and am so glad to be able to add it to my developing vegetarian repertoire....

Just leave it out. Adapt any recipe to the way it suits you. It’s easy to swap out ingredients or leave them out all together. I don’t like wine in cooking things such as stews etc. so I just leave it out
