Hey! I am Indian and not trying to rant. Would like to give you guys a small tip. Add the ground spices to vegetables instead of in the oil along with the solid spices, because that may burn the ground spices. Like in this recipe you could have added the ground spices to onion, garlic and ginger mixture instead of before that. This way you will be layering the spices which will bring out more taste. Also, there are some spices which are considered hotter (like red chilli powder, turmeric, cumin, garam masala), these are to be added early in the recipe as they need a longer time to blend in with other flavors. Other spices (like coriander powder, amchur powder) are more on the cooler side and are to be added later in the recipe as they tend to lose their flavor early. P.S. You are an absolute inspiration. I am a vegetarian, and actually considering going vegan cuz of you :)

I'm Indian and make samosas and tomato chutney all the time. But I love how you put it in the oven cuz most people just deep fry the samosa. I don't know why I never thought about putting it in the oven, its so much healthier and still has a nice crisp to it. I absolutely loved it! Thanks for your samosa recipe.

You are right, I am not vegan or even a full vegetarian, but you have inspired me to make a lot more vegan food, and to try out the lifestyle. I have not purchased any meat in a long time, but as far as dairy elimination, that's been difficult for me, however I have been able to cut way back. But yes you have inspired me to do that for sure, just so you know :)

just so everyone knows, i just made these but without using oil to sauté :) you don't need a "generous" amount of oil. use water or veg broth instead, it works!! so yummy, just made them!!

this is more of a cornish pasty. samosas are made from filo pastry making them thin and crispy. but this still looks tasty af!

The traditional ones are actually made from a thicker dough like in the video, though we usually use oil and water instead of butter and milk, although filo could be interesting as well, I've never tried it. :)

Even though definitely fried in vegetable oil, the dough is always made with butter, never with oil...so....not vegan. Lauren's version looks delicious!

These are so great for lunch if your a student! I make similar ones in big batches, pop 'em in the freezer, and then when I go to school early in the morning I just bring a couple with me, and they'll be defrosted by the time it's lunchbreak!
