For anyone interested, this was my take on the recipe: 400g white beans 400g kidney beans (If using tins, drain and rinse well, in advance.) 1/2 large white onion 4 large garlic cloves 100g oat flakes 4T Tamari or soy sauce 8T ground flax 1t salt 1t paprika 2t ground coriander 1/4t Turmeric (that's all I had left) 1/2t black pepper 2-3T tomato paste Red Chili Flakes, to taste *If I had it, I would trade out half of that soy sauce with a bit of liquid smoke. But I can't find it in Belgium, thus far. The flavours are bang on so I didn't alter them. I served it with a spinach salad with oregano and lemon to add a beautiful freshness and called it brunch. Thanks so much to The Happy Pear for helping to add another go to recipe for my arsenal. I think even the omnivores in my family will dig it... They just have to wake up, first 😕

jenna daneels no no no. That is not a breakfast sausage and neither is theirs I would have to change the spacing to make it a true breakfast sausage. I would also triple the recipe but will you got adding kidney beans from I will never know. I had a seitan once that was made with kidney beans and it made me sick let's just say it all came back. I like kidney beans but not in these sorts of things. Enjoy your sausage I guess it's called.

As for vegan sausages - I went to a vegan pop - up restaurant where I live a few months ago and they served a pretty brilliant dish there - carrot sausages! yes, I know....I was skeptic but it was super delicious! They peeled some carrots and soaked them overnight in a sauce they made with olive oil, whisky, smoked paprika and flaky sea salt and then after all these soaking hours they covered them in an aluminum foil and broiled them in the oven over high heat (200 C, 400 F) until the carrots became soft and tender (for about half an hour or so). You can make it in advance, because after the broiling the carrots should be fried on a grill pan (for a few minutes on each side). They served it inside a bread roll with some red onion rings, crunchy lettuce, mustard and barbecue sauce. ** I found the recipe online in my native language and translated it for your convenience, the measurements for the sauce are: 1/3 cup of olive oil, 2 tablespoons of whisky, 1 tablespoon of smoked paprika and a teaspoon of flaky sea salt. The sauce makes enough for about 4 large carrots. Give it a try if you want, you probably won't believe this thing is a carrot. That's the beauty of texture transformation.

These are truly AMAZING! They are the best sausages (vegan or not) that I've ever tried! Before I went vegan about 8 years ago, I used to make turkey meatballs that were very similar in taste and texture to these. I am bringing these for my family to try on Christmas day. The comments below have made me giggle. The basic mixture is not raw meat. Heating through and colouring is all that's needed. The boys said it was coconut cream which I think it's blended coconut similar to a nut butter. So it's not actually oil, they said no oil. I think they sound interesting. Will have to try and decided for myself.

Ohh I have to try your recipe. I've made something similar before with the base of a vadai (indian snack) recipe with black beans instead. Soak it overnight, blend it until smooth with some of the water in the morning, let stand for another day and the fermentation will make it rise twice the size until fluffy! Add salt, chopped green chilis, whole black pepper, garlic powder and cumin seeds. Deep fry like a donut or in shapes of meatballs. TASTED LIKE MEAT. It was mind blowing! Try YouTubing 'how to make vadais'!

If you are taking out fat and replacing it with protein it will be an entirely different outcome. Also the seitan needs wrapping and steaming for 3/4 minimum

I don't really like vegan cheese or meat you can find in shops, always soy, too much salt and sometimes even Palm oil. I'll get this out very soon! Can you freeze them to keep them for later ? Has someone tried to replace coconut by regular olive oil ?

I imagine if you went to town with a hand masher for the beans and maybe blended the oats up in a blender before adding (or just using oat flour) it there wouldn't be a problem. Finely dice your onions and garlic, and combine everything really well. When I make this i probably won't lug out my big food processor, I'll try it by hand first.

There are pepper pastes in Turkish and Eastern-European groceries or maybe try other pureed veg like peas or carrots. You could add soy sauce or paprika for colour. Good luck :)
