Broooo this is delicious! I’ve made it a couple of times thank you! The only thing I do a bit different is instead of chili flakes, I use some Thai chilis and add chickpeas for extra bit of gains! Thank you ! So good!

cant go wrong with coconut milk, not sure if its due to how you got it, whether fresh, canned or powder it has a potential to curdle up but it does not ruin the flavor. Just lower the temperature and keep on stirring it to minimize the possible curdling.

I don't know what type of coconut milk you use. Can coconut milk gets thick therefore you must shake it well before adding it to heat.

The recipe was very good but you are using too much oil. You could sautés all veggies with water and still get the same taste.
