I'm with you, Chelsea. I'm caring for my 90 year old mother and to a large extent my life is not really my own. Btw the thing you're slicing with is a mandoline (or non French is minus the e). I do pickled onion too but minus sugar. I often put a bit of fresh herb like oregano or rosemary. I also have homemade sauerkraut, and most of the time, kimchi on hand so I work in eating ferments. For a salad dressing I make white miso and lemon juice. I always buy the odds lemons because they're so much cheaper all the time. I always have a jar of homemade hummus, much like your chickpeas. I spread it on halved potatoes which I cook in the instant pot and then airfry when they're halved instead of toast. I need to get much better with greens which are a bit trickier when your meals can be a bit haphazard. I'll try your chickpea recipe for sure. But doing things when I can is definitely my way too for sure. Thanks, good luck and lovely to see you back. 😊

None of us know what lies ahead and best we don’t, eating healthy is good but it does not prevent serious accidents, nor medical conditions taking over our bodies. I have been trying to prep the starches since they take a while to cook. I try to have potatoes and rice in the fridge so I can throw a quick meal together. I think that we all appreciate your videos, even if you think that you are just making boring meals. :-)

Yes, thats a nice brand of nut butter, their mix with sunflower and pumpkin seed are yum. Where are your bake kumaras 😉 Mandolin. Peppercorns mustard seeds are excellent with the pickle onions. The piercing with the fork not necessarily for the potatoes.

Love your videos! In the beginning I was meal prepping every Sunday..now foodprep mostly means making more when I make something. Lots of potatoes, rice or hummus. And veggies are often out of the freezer! So it's so easy...

Over 4 years in and currently manage daily eating by using Streaks habit tracker app - my daily targets are simple: oatmeal, steamy starchies, big a$$ salad, potatoes. My mom passed away in December and simplifying to these targets has helped me regain focus on what is most important to me.

Hello Chelsea, sorry about your garden and your tree, I'm always sad when a tree is damaged or dies. I hope this stressful time will pass. I too have stopped doing too much prepping and batch-cooking as it was getting a bit over-the-top. It actually made me eat more in the end as I had all these meals in the fridge and I ate more to stop them going off - crazy! Also, I see little point in prepping in advance if the meal doesn't take more than 15 minutes to cook.

Love you and your family. My husband also has a wheelchair due to a TBI and stroke, he can walk but uses it to go in to take a shower. He used to use it to use it going to bed, but we got a new shelter dog who doesn't like the wheelchair very much. 😀

Hey y'all, if you're like me and have a hard time digesting chickpeas I've got a tip that might work for you. Sorry if Chelsea has already talked about this before but this has helped me eat more chickpeas. Buy dry chickpeas and soak them overnight in water. Then cook them until they are soft in a slow cooker/crock pot/instant pot. Usually I cook mine for ~8ish hours on low. I find that soaking beans/lentils/chickpeas really helps with my digestion. Obviously if you don't have the time or the tools then using canned chickpeas work just fine! Thank you for another awesome video ❤

I always have rice in the rice cooker. Everything is good with rice, soy, rice vinegar. Sushi bowls are so easy. Pre chopping veg makes it quicker come cooking time too. I do it when the groceries arrive.

I lose weight eating some peanut butter, but my thing is peanut butter sandwiches, so I decided that if I get a craving, to avoid jam, I would try toasting low sodium Ezekiel bread with some whole peanut butter, and a slice of orange, rind and all, and maybe a sliced strawberry,. It makes a grand sandwich to looik forward to for lunch some days. The key for me is to "have my cake and eat it too." I just try to find a way to satisfy that itch using the 'closest to original' that I can. Chelsea has tought me how to do this. When I honestly do my best and satisty those urges, I don't binge, still snack, if I want, and am able to stay within my low calorie density parameters that I want. Snacks are usually a starch, such as a cooked potato or sweet potato. Jmo. Enjoy.

The final amount you would eat per pprtion is neglihable. She used 2 tbsp for the entire salad and it might be 4 portions. A little bit of fat is important and goves a lot of extra flavour!

Interesting ingredients will have to try thanks for sharing ! would not have ever thought to add peanut butter or cinnamon to that mixture. I like to cook like 8 portions of rice up and freeze them in servings then I pull them out that morning or defrost real quick/add to stir fry to speed things up, if I want pasta that week I cook it up in large portion and left overs in zip lock bag of cold water they will keep all week and be fresh and not soak up your sauce steam up bag of potatoes and bake my sweeet potatoes all at once to so ready to go for week but def would not call it meal prepping real insta pot and stove does everything then I throw them in the frig and freezer and pull out and top with quick things for the week. I have developed very simple taste lol one of my fav things is yellow potato’s with liquid aminos and nutritional yeast, large side of broccoli with liquid aminos, lemon and nutritional yeast rinsed and drained canned kidney beans and handful of cherry tomatoes fresh Literally 5 min or less and so good and feeling

I recommend getting a Potato Express microwave bag (or equivalent). I use for giant Idaho potatoes and set for 5 min (no turning potato) and I'm on my way.

I've missed you! I have been vegetarian for 30+ years, but this is only my 2nd year being vegan. No dressing... My friends always ask me about sauces and/or butter on veggies... Steamed veggies. I say I eat them plain. Shocked expressions "what does THAT taste like?". Depending on the veggie, I say like carrots, asparagus, broccoli.....
