Day 1 tested positive for covid. This is the week I'm going to make my meals (everything I eat is reheated packaged meals). So pleased to land on this video as I'm just going to recreate it all. All that food looks so good. I use the instant pot to bake my potatoes for the week. So quick and easy. Then I air fry them throughout the week. I could eat potatoes for every meal. ☺️

If you pour boiling water over cut potatoes (like cut into fries) and set it for 5-10 minutes, then drain and dry them, you can make some epic fries in the air fryer. Quicker than steaming....I think...You could probably do the same for just the cut in half potatoes

I used to get everything all year round in the UK but learned to shop seasonally in NZ, there’s no alternative. I couldn’t believe it when we first went 3 months with no avos or no strawberries!

Hi Chelsea, loved the video and love your podcast. Would love to hear more about your running and how your physique has changed. I was also wondering if you are getting any niggles running 7 days a week. I am also a runner, have been since 2015, but worry about injuries, I'd love to do 5k a day, but have never done daily runs for fear of niggles. Currently do about 4 days a week.

With the Tofu you could put some more finely chopped veggies in the pan, like Bell pepper etc. Then it will come closer to a 50/50 plate :)

Your "old fashioned steamer" I thought was a pasta pot. I see them at yard sales often and pass them up thinking, I don't need this.... but using it as a steamer, that's awesome! I haven't tried scrambled tofu but I bought some to try it. I don't measure much while I cook either ; )

I didn't have an actual recipe so what you see is what I eyeballed too. :) I don't really use measurements so when I share recipes it's a HUGE effort to actually put numbers on it as I don't really cook that way.
