I made this for my nana, as my grandfather passed away and needed to make her some comforting food. The chef saying “so good it’ll make your grandma proud” made me want to try it. As a daughter who’s always wanted to impress my dad’s VERY picky taste in food, this was finally a hit!!!!! He said it tasted like a professional cooked it and had several bowls. The soup is amazing and has very nice, complicated depth of flavor. I recommend only browning the meat to medium rare for tender, flavorful meat, and adding two tablespoons of better-than-beef bouillon. The wine I used was a red Cabernet Sauvignon

That’s what’s incredible about your instant pot. You can Sautee in the same pot and reduce cleanup! I sauté the veggies to soften first - then combine the beef back into it.

Any other spices that might be delicious? When I fry the onion, I add the garlic, brown sugar and mild curry powder. It turns out delicious every time! And Worcester sauce is a must!

Excellent recipe! Making my vegetable beef soup today and always looking for ways to tweak it a little. Bravo on the beef broth and better than bullion. Always use it and people want to know why my soup tastes richer than theirs. When I tell them, they remark that they never thought of it. Have never marinated my stew meat in soy, or browned it in wine. Will have to try that.

I don't use broth, always, I do use beef base, or beef boullion, so it will create the flavor. The beef base is best, but you only need a little, it is very salty. People say the boullion is salty, but I don't think it is, and with boullion, you do need to add as much as the package says. You can buy it in cube, and it is one cube for each cup of water, so measure your water, and you should be fine. I live 20 miles from civilization, and I don't always have broth, and I am not going to drive to the store, just for that. I always find a way to improvise.

I made this today...it was INCREDIBLE! Hands down the best vegetable beef soup I've ever had! I pretty much followed the directions verbatim, except I was a bit "heavy" on everything, but not a ton. It made a HUGE pot! The flank steak is crazy expensive right now...but so is every cut of meat it seems...thanks to the CHINESE/democrat virus! But it was well worth it. Absolutely incredible!

Looks pretty good but I would omit the mushrooms. First off I’m not a fan of mushrooms to begin with and secondly where I come from nobody would add mushrooms to vegetable beef soup. Also most folks that make this style soul here do not use stew meat like she does here. Instead they almost always will cook a beef roast and then shred that to use in the soup and then they also have the broth from the cooked beef to use for their soup. They would only use bought stew meat like that if maybe they were in a hurry or something. A lot of times here, vegetable soup and many other soups are just a way to get rid of leftovers. I can remember when I was growing up, my grandma cooking a big dinner every Sunday for after church. Then lots of times, especially in the fall and winter months, on Monday she would take all those leftover veggies she had and use them to make vegetable beef soup. Whatever she didn’t have as leftovers she would just add it fresh and it would make a perfectly tasty soup!! Grandmas know best!
