Instead of paneer use Tofu. The Hot Pot cuisine is food from SEA countries (South East Asian). Unlike India and Western countries they did not use animal milk (Cow/Goat/Sheep/Camel) back then. Even today they won't use animal milk/Products in hot pot. Their cuisine is based on soy products. Using paneer is a bit strange in hot pots. Tofu is easily available in many supermarkets these days. Def don't use paneer or it won't taste right. Also for hot pot traditionally egg noodles or rice noodles is used. Especially with light broths like yours. The only exception for light broths with thick noodles is Udon. The type of noodles you have shown does not look like that. Not to mention pouring the broth like that the Noodles won't absorb any of the flavor since it's already been cooked and soaked in cold water. Hot pot noodles need to be cooked in it directly. That's why they use thin noodles for hot pot. Also for hot pots either its a noodles focused hot pot where after the noodles is done ppl add the rice at last into left over broth and finish the meal. Or the vegetables/meat are all cooked first, ppl have them first and towards the end the noodles are added with more broth and eaten. This isn't how hot pot is prepared for the proper experience.
