Veggie Spaghetti Sauce
1 onion chopped
2 carrots chopped
3 cups of fresh spinach leaves chopped
2 cups of frozen broccoli thawed and chopped
1 bell pepper chopped
2 stalks of celery chopped
1 large can of mushrooms with juices
4 cloves of minced garlic
4 to 6 fresh sprigs of thyme
1 rosemary sprig
2 teaspoons of Italian seasoning
salt&pepper to taste
4 tablespoons of butter
45 oz. of jar spaghetti sauce or tomato sauce
and any other veggies you might want to use!
Dump everything into a large pot, bring to a low boil on stove, them turn down to a low simmer, and cover pot with a lid. Simmer for 1 to 2 hours, stirring occasionally.
Serve over spaghetti noodles, or roasted spaghetti squash noodles.
We like to garnish our spaghetti with grated parmesan cheese, and chopped fresh basil.
Or you can put all your sauce ingredients in a crockpot, cook on low for 5 hours or high for 2 hours.
