I used to work at a popular fried chicken chain in the south (that is sadly now almost extinct) and we had a wonderful broccoli pasta salad on the menu. It was spiral pasta, raw broccoli, diced onion, diced celery and ranch dressing. It was one of the most popular menu items. So good!

Question: I’m not good with raw onion 🧅 in salads 🥗. What could I use instead? I understand onion gives like a kick& tanginess. Could I use the onions that are dried and crunchy that people put on baked bean casseroles? Or would that cause a soggy mess?

Can you tolerate shallots or green onion. I use both. Also by letting red onion sit in water for abit then drained makes them less pungent.
